Supper/Dinner Time! What's on the menu ?

Butter beans and stinging nettle pesto, with toast spread with Mergulo plant butter (game changer).

It's taken me years to work out what nettle smells of when cooked, and today the penny dropped—it's prawns*. That wasn't the flavour I was looking for today, and tbh it spoiled the beans a bit, but if I was making a mock tuna pesto pasta, nettles could work a treat.

*I'm not going mad am I? They do don't they? I did wash them first!
 
I made the Salisbury seitan (red lentils, breadcrumbs and vwg) and made so much I sauteed 5 as cutlets that will finish in the gravy, and an equal amount as nuggets which can go in the air fryer. I'll cook up some mixed frozen veg blend.
I want some kind of sweet but not sure what
 
Sunday Easter dinner - I bought a Tofurkey Ham for the first time and was pretty impressed with it - also made a huge amount of roasted root veggies - potatoes, sweet potato, carrots, parsnip, beet, onion, zucchini - for dessert we had various Easter treats and an orange

last night we had the leftover hamm chopped up and reheated with the leftover vegetables plus a small side dish of the leftover pasta from Saturday - so good too

It was really warm today and I was craving salad & olives, so we had mixed salad leaves with dressing, sweet potato pagodas, olives & some tomatoey lentils & chickpeas.

A huge salad made with some of the veg from the discounted veg box at Lidl's. Chicory, lamb's lettuce, sliced fennel, beetroot, smoked tofu with Dijon vinaigrette and yeast flakes.

A slice of toasted ww artisan bread with Flora.

A few peanuts.
