Supper/Dinner Time! What's on the menu ?

Butter beans and stinging nettle pesto, with toast spread with Mergulo plant butter (game changer).

It's taken me years to work out what nettle smells of when cooked, and today the penny dropped—it's prawns*. That wasn't the flavour I was looking for today, and tbh it spoiled the beans a bit, but if I was making a mock tuna pesto pasta, nettles could work a treat.

*I'm not going mad am I? They do don't they? I did wash them first!

A bowl of peas plus some La Vie tofu crispy nuggets plus some lemon pepper/yeast flakes and a drizzle of evo.

A warm ww apple and banana crumble with a hint of cinnamon.

we had our usual Saturday night fare of spaghettini, garlic, onion, chili peppers, mushrooms, cherry tomatoes, kalamata olives - delicious as always and some dk choc bark and nuts for dessert

I will be having baked maple-glazed tofu with roasted asparagus, broccoli and potatoes, and some apple sauce.

I made the Salisbury seitan (red lentils, breadcrumbs and vwg) and made so much I sauteed 5 as cutlets that will finish in the gravy, and an equal amount as nuggets which can go in the air fryer. I'll cook up some mixed frozen veg blend.
I want some kind of sweet but not sure what

Yesterday we had focaccia pizzas with vegan cheese, courgette & smoked 'ham' topping.

Brown rice & kidney beans with roast veg ratatouille.

All nice, but the highlight was the skin-on cloves of garlic put in the mix, baked to the point of butteriness.

Whole wheat Italian tagliatelle with braised leeks, grated Violife Proscano, a drizzle of evo, chipotle flakes/yeast flakes.
Leftover apple crumble.
A few squares of mint filled plain chocolate.

Sunday Easter dinner - I bought a Tofurkey Ham for the first time and was pretty impressed with it - also made a huge amount of roasted root veggies - potatoes, sweet potato, carrots, parsnip, beet, onion, zucchini - for dessert we had various Easter treats and an orange

last night we had the leftover hamm chopped up and reheated with the leftover vegetables plus a small side dish of the leftover pasta from Saturday - so good too

A bowl of forbidden rice with peas/spinach/smoked chipotle flakes, yeast flakes plus a drizzle of evo topped with
marinated air fried cubes of tofu. It's not my favourite way of making tofu but it served its purpose.

It was really warm today and I was craving salad & olives, so we had mixed salad leaves with dressing, sweet potato pagodas, olives & some tomatoey lentils & chickpeas.

A huge salad made with some of the veg from the discounted veg box at Lidl's. Chicory, lamb's lettuce, sliced fennel, beetroot, smoked tofu with Dijon vinaigrette and yeast flakes.

A slice of toasted ww artisan bread with Flora.

A few peanuts.

I seem to sprinkle smoked paprika on everything these days. It's the new pepper.

I love butter beans with savoy cabbage. I don't buy them over here because they are far too expensive.

Friday night we had an Yves chkn burger with hummus on the bun, cucumber slices, cheez shreds, pickled jalapeno and the rest of the cucumber on the side with potato chips/hummus.

Last night we had tacos with Gusta ground/black beans/onions/jalapeno for the smeat and green onions/cherry tomato/olive pica , salsa and cheez shreds. For dessert mandarin orange, easter chocolate.

I'm going to make a veggie pot pie for dinner. I'm trying to clean out the freezer, and I have crust that needs to be used. It will have broccoli, carrots and peas in it.
