I love cauliflower for sauces! I haven't made that Mac & nooch sauce for some time. I remember cooked cauli, cashews, nooch, lemon, dijon mustard, and misoRigatoni with cauliflower sauce.
I didn't expect to like it, but I'd seen cauli used in so many 'mac-n-cheese' vids that I thought I should give it a go. The cauli adds a depth of flavour and is way more than a bulking agent. This is one to add to the repertoire.
