Supper/Dinner Time! What's on the menu ?

Seasoned panko-encrusted tofu cutlets, mashed turnips, sautéed kale and unsweetened apple sauce. I had plenty of the seasoned panko left, so I took some cooked soy curls out of the freezer, coated them with the panko and fried them up in just a little olive oil. They are so delicious! It's all I can do not to eat them like a snack, lol!
 
we had hummus and potato chips for dinner... it was the canned hummus and I don't think I will buy it again as about 2 hours later my body decided it did not enjoy it at all .... that'll teach me ....

That surprises me. I didn't think you could go wrong with hummus... Hmmm... maybe mix it one measure of hummus and an equal measure of cilantro leaf?... :yuck: :hurl: :p

Made my vegetarian vegetable soup with alphabet noodles
Merle O'Neal did a YouTube of her veganized childhood meals and this was one of mine. Cambells vegetarian veg soup--cause just the vegetable soup with alphabet noodles had beef broth and the vegetarian had tomato base

Red kidney bean and kimchi single-pot pasta (penne).
I added a bit of dijon, tomato paste, maggi and ginger. Actually, it was already spicy enough because I had used one of the tangier kimchis available. Next time, I will use a tamer kimchi.

I don't usually buy canned hummus (it was the Tamam brand from India) I usually buy the small cups in a pack from Walmart and that is refrigerated - we did have it once before a couple of weeks ago and didn't eat the whole can in one sitting - it could have been the citric acid in the canned version vs the lemon juice in the fresh - and yes, I should just be making my own.... I know

last night we had Indian ready-to-eat Channa Masala to which I added another can of chick peas and scooped it up with whole wheat pitas

I had a quick dinner before I go out again. I reheated some leftover veggie pasta and had some nuts and crisps.
