I ended up marinating the tofu in Italian dressing and grilling it and the potatoes (yum!). I steamed the broccoli. The tofu was delicious! I loved the chewy texture, and the crisp was perfect. I'll be doing this again.I'm working all this week, and I need to do some food prep. I took out some tofu from the freezer, so I might do BBQ tofu with roasted potatoes and broccoli. Not sure yet, though. It's gorgeous today, so I might even grill outside.
