Supper/Dinner Time! What's on the menu ?

I have not been feeling well at all today and I just had some dinner as I was suddenly hungry. I had a baked potato with vegan butter, broccoli and a seitan sausage.
 
Made the lentil, millet and vwg patties again. They've become my new favorite thing! And, the fabulous local corn!

I got millet on clearance so I'll be experimenting--sent any recipes or tips on millet!
 
I'm working all this week, and I need to do some food prep. I took out some tofu from the freezer, so I might do BBQ tofu with roasted potatoes and broccoli. Not sure yet, though. It's gorgeous today, so I might even grill outside.

I ended up marinating the tofu in Italian dressing and grilling it and the potatoes (yum!). I steamed the broccoli. The tofu was delicious! I loved the chewy texture, and the crisp was perfect. I'll be doing this again.
 
last night I made us Yves chkn burgers on a bun with hummus, sliced tomato, sliced cucumber, oelek and on the side the rest of the cucumber as sticks, the rest of the tomato, a zucchini sticked and a small hummus with hot sauce to dip them in

fibre night last night.... 2 cans of beans, pinto and black, rinsed and mashed in a casserole dish, spices, salsa, frozen corn, celery, peppers, onion and into the oven - served with some cheez shreds and pickled jalapeno on top and scooped up with tortilla chips - so amazing a $6 meal for two and then a Welch's freezies for dessert
