Supper/Dinner Time! What's on the menu ?

I still have a good 4 cups of cooked pumpkin left and need ideas. It's kinda stringy so I would like to blend it, thinking pasta sauce

I had buffalo tofu sticks. I tried a baking recipe this time, but I think they need less cornstarch and a little salt. I made some vegan ranch to go with them. They were decent with the buffalo sauce and ranch.

Tonight I made my first "autumn meal" of the season, and it would be great to share more photos.
Marinaded tofu, stir-fried with purple onions, orange bell pepper, green spices and pepper; served on steamed red potatoes, mushrooms and carrots.6a371828-3e00-493b-b0ff-d60bca3a47bf.jpg

I tried a version of buffalo tofu sticks from a recipe that I saw on youtube - basically cut in 1/2 inch slices and bake on a cookies sheet with a sauce on top, flip and more sauce - they were good but I didn't like the sauce as it had italian seasoning and poulty seasoning plus plus - next time I will keep it simpler and more in line with the spicy teriyaki type flavours that we prefer - served on rice with a side of brussel sprouts.

Thursday was a long work day for both of us so I ran out around 9pm and picked up some spring rolls, spicy garlic fried rice and spicy garlic noodles.

Last night I bought another of those very large bread pizzas and split it into 3 pieces, froze 2 of them and made pizza with pizzarola, olives, pineapple, greens onions, cheez etc - dessert was homemade bread with jam

Thanksgiving Dinner last night and it was delicious and very filling - Gardein turkey rolls, boiled potatoes, sauted carrots sticks, dressing, mushroom gravy and homemade cranberry sauce - I really love making cranberry sauce, so simple - zest of an orange, all of the juice, some maple syrup, a bit of brown sugar, a package of cranberries and a smidgen of salt - the dressing was a combo of a package I bought awhile ago with sauted onion, garlic, handful of cranberries, apple, 2 mushrooms and some more of my own croutons.

Very thankful for good food, good company, a safe and warm place to live... and all of you, of course.
