Supper/Dinner Time! What's on the menu ?

Wednesday I went out to dinner with my mom, sister and four family friends. It was a sea creature place, but there were vegan options. I had wonderful veggie sushi and a delicious seaweed salad seasoned with rice vinegar, sesame oil and sesame seeds.

Last night I had toast with peanut butter and a banana. I ended up having to work yesterday, so I didn't finish up until 7ish and I wasn't in the mood to cook.

Tonight I had salt and pepper tofu, leftover fries from lunch with my brother and sister-in-law, and some sautéed kale.
 
my noodley soup was huge yesterday with all the cabbage etc so for dinner we kept it light - two zucchinis cut into long wedges - breadsticks a few potatoes chips all dipped in hummus with sriracha on top

I love cabbage in soup. I think I'll get some at my next grocery stop.
 
It's funny, I love cabbage, but never in soup! I remember wondering why not so I added some to a usual veggie soup. I did not like that texture!

I had bean fritters and a basic salad

I always put the cabbage in first so that it boils for longer than anything else so I don't notice that it is even there.

Last night we had fusili with garlic, onion, bell pepper, basil, olives, capers, mushrooms and Gusta ground with spaghetti sauce. Lots left over.

Heated up Edamame "mac & cheeze" for yesterday's dinner. The day before we had the local pizza joint's vegan pickle pizza which they only make a few weeks a year, despite protests to serve it more often.

Tonight? Not sure yet.
 
last night was an open face Beyond burger hot sandwich with fried onions/mushrooms, gravy and chunks of potato and sweet potato baked in the oven - so good - sesame snacks for dessert
