Supper/Dinner Time! What's on the menu ?

Small plates as I was at a B'day party last night. I only had a few of my nibbles as the food from the caterer's looked
far more plush than what I had bought over for dinner:

Corn & black bean salsa with tortilla chips
Whole wheat couscous salad.
A few spoons of mango mousse.


When I got home at 11.45pm, I had half of my Greggs vegan sausage roll plus a few chips and another spoon of salsa.

I made rye bread using 2 cups rye flour to 1 bread flour. Recipe is the opposite :ignore:. I worried it would be too dense, but it's so very good.
I sauteed two packs of tempeh and now have enough for a lunch sandwich

Last night I had a black bean burger on a bun with all the fixin's and a handful of tortilla chips. I think tonight I will have barbecue tofu on the grill with corn on the cob, four-bean salad and sliced tomatoes.

Last night was Meatless farm No Pork & Apple bangers air fried with spring onions.
British baby potatoes with Flora plus a salad; corn, grated carrots, avocado with vinaigrette.
Apple puree with Flora double cream.
A multigrain cracker with Brixton Blue.

butter beans with sundried tomatoes, onions, garlic, no chik broth and almond milk simmered with kale and a potato I cooked yesterday.
I bought butter beans because so many say they're like gigante beans. I know they aren't but it had been so long since having them. I don't really like them. They're probably my least favorite bean. all mealy. Nothing at all like gigante other than a similar shape and size

I think the largest dried beans I've ever had were fava beans. I didn't like them, even though I cooked them properly and ate them all. I forget what I put on them... probably a little oil and some garlic, and maybe some savory. (I forget what kind of savory I might have used- there are 2 kinds. One of them is supposed to be really good with beans, and is commonly known as "bean herb" in some cuisines. Whatever kind I used, it didn't do the trick).

I'm going to have breakfast for dinner: a tofu "egg" and cheez sandwich and a vegan sausage patty. I'm home in CT just for the night, so I've got some chores to do and not a ton of time to cook.

Roasting purple cabbage slices, pre cooked potato slices, onions and peppers and portabello mushrooms. Only just now occurred to me what great foods to grill :shrug:.

Edit: I hate roasting veggies. Took almost 50 min for the cabbage to soften, then it was tough around the edges and the middle was just like cooking in the instant pot--which I'm sticking to.
