Supper/Dinner Time! What's on the menu ?

Mixed grains from yesterday fried up with stock, plus tofu, red cabbage, asparagus and garlic. Served up with kale crisps cooked with salt and nooch.

It looked like a car crash but it was absolutely dee-licious.

last night I made Hot Hamburger Sandwiches with Beyond Burgers, boiled potatoes and steamed baby peas - mushroom/onion gravy

for dessert I made up on of the vegan Jello's that I put in my honey's stocking for Christmas as it has been years and years since either of us has had Jello and it turned out okay and had a couple of oatmeal cookies with it

I have been eating out of my fridge/freezer all week, and today, I am at home for the full day, so I'm going to make a proper dinner: tofu quiche with spinach, faux bac'n, onions and tomatoes. I may have a side of fruit as well.
 
Comfort food as it was damp and a tad nippy today due to all of the rain:

Seitan Bourguignon and creamy mash.

A mandarin plus a few squares of mint filled dark chocolate.

I have tons of leftovers, so that's tomorrow nights dinner sorted.

 
Smokey black beans and rice. Contained black beans, smoked tofu, orange bell pepper, carrot, smoked paprika, stock.

A Brazilian might not agree, but I'm happy to call it Feijoada.
I made "feijoada" once, using the recipe from the original "Diet For A Small Planet", by Frances Moore Lappe. The recipe called for whole orange- (which initially made me go "Aarrr????!!!", like Scooby-Doo)- but I followed the recipe anyway, because I love to experiment with really different tastes. I even eat my mistakes because I hate to waste food- I just don't make them again. But this wasn't a mistake- it worked, surprisingly enough.
 
I got home too late yesterday (6pm) as I was called out to town for a pidge emergency. It's usually the time that I have dinner
so no time to cook.

A white cabbage slaw with thinly sliced seitan plus vinaigrette and yeast flakes.
A braised leek salad with vinaigrette.
Sourdough artisan style toast plus Flora.
Alpro
plain soya yogurt with a few drops of vanilla, ground hazelnuts plus sweetener.
 
a delicious homemade bean/veggie soup - I don't know why I don't do this more often as we love love loved it - pinto/great northern beans done in the crock pot overnight - carrot, celery, parsnip, onion, potato, beet, lots of spices including italian seasoning which made the whole place smell like we were having pizza - the beans were done perfectly (10 hrs on low - 4 dry cups total) and some of them had been stored for quite a while - so we had enough for a very large bowl plus one extra scoop for dessert and had breadsticks on the side - a container of beans to be used for burritos in the future and enough soup for one more meal plus a snack
