we had black bean asian fried rice last night - I did the rice early and put it outside to cool and maybe make some resistant starch, then my honey did the rest - it was delicious

I think I'm going to make a tofu dish. Nora Cooks posted a grilled/fried tofu dish that is supposed to be like crusted chik'n. It looked simple but tasty. I will have roasted potatoes and a broccoli/cauliflower mix with the tofu.

This was actually from Isa, my bad. Anyway, it turned out great. It's so tasty for such a simple recipe. I'm going to chop it up tomorrow and top my salad with it.

I'm stuck at what to make--and I'm hungry!
My freezer is jam packed, about half my sons stuff, but I really need to clear it out or I'll lose things
I tried that Hot Sour soup from Costco with ramen noodles and veggies, wasn't that good, but I hate returning food unless it's spoiled or really bad.
I may make the Korean tofu bites from Costco with broccoli

Soy curls stir-fry, with asparagus, mushrooms and onion. Served on steamed yellow potatoes.
Tried a tomato paste, molasses and poultry spices-based marinade for the soy curls. It turned out not bad.

pesto gnocchi last night and served on top ... sauted onion, garlic, mushrooms and chopped up the bit of Gusta pepperoni I had left and added a bit of Korean BBQ sauce to make it even tastier

so sad as I just have one more meals worth of pesto left in the freezer
