Supper/Dinner Time! What's on the menu ?

Potatoes Anna plus Happyvore bangers made in the AF.

I had to look up what Potatoes Anna was. Sounds delicious. It's similar (but not as fancy) to the potato and onion bake my mom used to make when we were kids. It starts in the skillet and ends in the oven.

Not sure what I'm having for dinner tonight. I might do something with the leftover vegan queso, possibly nachos or a mac and cheez dish with a chopped Boca chik'n patty and some broccoli. We'll see. I'm picking up my friend from the airport tonight, so I'll need something quick.

a Beyond Burger hot hamburger sandwich with a huge side of baby peas and boiled potatoes with gravy - I do really like the new Beyond Burgers, there is no terrible smell and they are very thick/meaty - a nice treat once in awhile

I was shocked that I liked them! They seem to go on sale right about the time I want more!

I got Chinese take out, pan fried noodles with vegetables and tofu. SO much! I asked for the white sauce to avoid the fish sauce and added chili oil
It's on their Chinese menu and very much different from typical American chinese

we had a late start on dinner so just did the bean dip in a pot thing - sauted some onion and jalapeno in olive/jalapeno brine - added in premashed pinto beans (not rinsed) and 1/3 can of rinsed black beans / salsa / freshly ground chipotle/chili dry peppers / sliced kalamata olives - a few shreds of cheez and pickled jalapeno on top and scooped up with blue corn tortilla chips - 3 almonds, 1 brazil nut and 2 squares of dk christmas chocolate for dessert

I was invited over to a pal's for drinks and nibbles.

We had pink gin (rose petal & strawberry) cocktails, tortilla chips, green olives, cashews, sweet potato chips, paprika and wasabi rice crackers. She gave me the packet with leftovers and I see that they are vegetarian as it says 'vegetal' and not vegan! :weary_face: I also bought over some roast chickpeas with Tajin plus I made some savoury turnovers which we warmed up in the AF.

A mandarin for dessert.

I had veggie potstickers, spring rolls and steamed rice tonight. I have been away for a few days and have eaten out a bit. I had a delicious vegan taco salad on Saturday and the leftovers on Sunday. Last night was a pasta dish my mom made with sun-dried tomatoes, onions and black olives. It's one of my favorite dishes. So good!

A Beyond burger with mayo, dijon, and onions
Now I'm making 'baked' beans. Maybe I should be baking them? I sauteed onions, tomato paste, garlic, molasses, some brown sugar, vegan worcheshire, chopped jarred jalapenos. Definitely missing something :shrug:. Maybe just salt

we had our chili as burrito stuffing last night, along with some spinach, cheez shreds, pickled jalapeno and for dessert some nuts and oatmeal cookies

I'm going to add three Gardein meatless balls to some leftover bow tie pasta with sun-dried tomatoes, onions and black olives.

RIght about that- I did add it, as well as liquid smoke. They turned out fantastic after simmering a while!
I despise smoked paprika. I mention it because I was so convinced I would love it, I bought two different well loved brands 🙄.

I roasted cauliflower and had some in a corn tortilla with hot sauce and a smear of mayo
Also half of a sub I got for lunch--best sub I've had in a very long time, from a localish sub shop. They use Gardien chik'n fillets, arthichokes, a mix of slaw and their own vegan sauce on a really good roll
