Supper/Dinner Time! What's on the menu ?

pizza night last night - I was able to buy my favourite slab bread plain pizza in its huge size (22' x 15') as it was half price and I stored it outside (so so cold) until last night when I cut it into three pieces and put two in the freezer and made our usual green onion, mushroom, pineapple, gusta pepperoni, cheez shreds etc - so good and have lots more to go

I might try making a coconut curry tonight with tofu. I have leftover rice from the rice paper sushi rectangles, and I'm all stocked up with veggies, so it could be good. If I don't do that, I might make a stir-fry and have that over the rice.

I went to a store called Iceland today and bought some vegan frozen food. I’m going to try a vegan burger in a toasted pitta with lettuce, tomatoes, gherkins, mayo and ketchup.

I might try making a coconut curry tonight with tofu. I have leftover rice from the rice paper sushi rectangles, and I'm all stocked up with veggies, so it could be good. If I don't do that, I might make a stir-fry and have that over the rice.

I went with the curry, and it turned out pretty well. Most of these curries called for red and yellow peppers, but I can't really eat peppers, so I skipped them. I put in carrots, broccoli, peas, potatoes, onions and spinach. I think it could use a kick of heat, so next time, I will add some red pepper flakes (those don't seem to bother me, lol). I was very happy with the flavor overall, though. I had never made a curry before, but I'll be making it again.

Warm apple (with a hint of cinnamon) crumble plus soya cream.

we had Thai takeout and it was delicious - chocolate cake (Dufflet) and cashew ice cream

I will be having more of the curry tonight with rice. I'm also going to make a dip or something for the Super Bowl, or maybe nachos.

It's damp and chilly over here so I made a baked cauliflower cheeze with 3 different ones; Violife mozzarella style, Violife Prosocano and vegan Raclette. Air fried Happyvore bangers.

Warm apple (with a hint of cinnamon) crumble made with whole wheat flour plus a huge drizzle of soya cream.

made myself a simple canned tomato soup and added 2 handfuls of frozen mixed veggie, a lot of soy curl crumbs and croutons - then hummus and breadsticks for dessert

Made Salisbury seitan patties simmered with some of a french onion dip packet, mashed potatoes, and broccoli. Impressive for a Monday dinner!

Leftover veggie/tofu curry with rice. It's even better after a day in the fridge.

Sojade yogurt with hazelnut plus sweetener.

I'll be having the curry again. I think I'm going to have to freeze some, as it made quite a lot.

since we didn't have our pasta on Saturday night we had it last night - spaghettini aglio y olio with lots of mushrooms, cherry tomatoes, onion - so tasty and for dessert a few potato chips

Had more of the salisbury seitan mix left, so I added more vwg and kneaded, then cut into nuggets and floured and lightly fried.
I believe I solved my craving for Impossible nuggets
I should eat a vegetable

a Beyond Burger hot hamburger sandwich with a huge side of baby peas and boiled potatoes with gravy - I do really like the new Beyond Burgers, there is no terrible smell and they are very thick/meaty - a nice treat once in awhile

I got the reduction almost spot on.
