Supper/Dinner Time! What's on the menu ?

I was able to buy some aweomse ready to eat Indian chana masala, spicy, and so I made souped up rice - I put some frozen veggies in a pot, then added two packages of the chana masala and the huge can of chick peas (I found them in the Indian section of the grocery store for just $1.29 and they were massive cans) - heated it all up together as the few chick peas in the premade meals are not sufficient - served over the rice - with leftovers...

I will go back and buy more of those cans as they had red kidney beans also - the chick peas were very tasty and the smaller cans normally cost me $1.50 so this is a great deal.

pizza night last night - I was able to buy my favourite slab bread plain pizza in its huge size (22' x 15') as it was half price and I stored it outside (so so cold) until last night when I cut it into three pieces and put two in the freezer and made our usual green onion, mushroom, pineapple, gusta pepperoni, cheez shreds etc - so good and have lots more to go

I might try making a coconut curry tonight with tofu. I have leftover rice from the rice paper sushi rectangles, and I'm all stocked up with veggies, so it could be good. If I don't do that, I might make a stir-fry and have that over the rice.

I went to a store called Iceland today and bought some vegan frozen food. I’m going to try a vegan burger in a toasted pitta with lettuce, tomatoes, gherkins, mayo and ketchup.

I went with the curry, and it turned out pretty well. Most of these curries called for red and yellow peppers, but I can't really eat peppers, so I skipped them. I put in carrots, broccoli, peas, potatoes, onions and spinach. I think it could use a kick of heat, so next time, I will add some red pepper flakes (those don't seem to bother me, lol). I was very happy with the flavor overall, though. I had never made a curry before, but I'll be making it again.
