Supper/Dinner Time! What's on the menu ?

Organic, whole wheat gnocchi in a mushroom, Violife Mozzarella style sauce finished off with yeast flakes and grated Violife Prosociano plus a
drizzle of evo.

Carrots made in the IP with a drizzle of evo and a sprinkle of yeast flakes.

Soya yogurt with ground hazelnuts/sweetener.

I was wondering why the gnocchi tasted so much better than the usual ones. I read the label and it says, 'made in Italy'. Their flour is so much better and that's why Italian pasta tastes so good.
 
a casserole size bean dip - 2 small onions, 1/3 lg bell pepper, large jalapeno all chopped - a can of pinto beans and a can of kidney beans mashed - all mixed together with salsa, garlic powder, chipotle powder, paprika, cumin, sliced kalamata olives and halved cherry tomatoes on top - into the oven for an hour and served with cheez shreds on top and scooped up with blue corn tortilla chips

Last night I made latkes, served with homemade apple sauce I had frozen, with some leftover coleslaw. It was sure tasty. I haven't met too many potato dishes I dislike, but latkes are one of my favorites.

My hammy seitan and bread are both really good, and enjoying having sandwiches
I have cinnamon rolls baking now
I did want to make potato pancakes but got totally sidetracked! I have lots of potatoes.
I can always make them tomorrow :laughing:

Small plates:

Leftover cabbage, lemon & white bean soup with a sprinkle of yeast flakes.

A corn/mushroom/grated carrot salad with vinaigrette and yf.

Granary multi seed baguette from Land & Monkeys with Boursin.

Did a little experiment for lunch.
Sliced off a large chunk of Tofu (maybe 200g or so).
Broke it up and threw in the blender with...
Half a nori sheet
salt, garlic powder, onion powder, 2 tbspoons nooch, lemon juice, 4 teaspoons Tapioca starch...
Blitzed, shaped into a "fillet" and fried lightly for 12 mins...
Had with a little vegan mayo, capers on 2 slices of fresh bread.
Nom.

we had a light snacky dinner last night as brunch was eaten mid afternoon - one small pizza shared with sauce, Gusta pepperoni slices, cheez shreds and green olives - bread sticks with hummus/srirach and a few potato chips for dessert

It needed only a little salt and was awesome. Next time I'll try steaming first. Apparently that sends it to the next level. :)
Pizza is a once a week "easy to prepare" thing for me :) Usually with a "Pinsa" base, some nice pizza sauce and I often simply leave off the "cheese". Violife works, but is a bit too sticky IMO.
Throw on olives, onions, mushrooms, corn, maybe some Oumph!, seitan or similar. :)

I made an Impossible meat gyro last night. I used ground flax as a binder, which really made a huge difference. They usually fall apart, as the Impossible meat tends to be a bit crumbly when cooked that way. The flax worked really well. I will definitely make this again.

was a bit full last night as I bought a 10 lb bag of sweet potatoes the other day and I cut 3 of the very big ones in half and baked them, with a halved onion, in the oven - to go with them I made an Yves chkn burger with sliced tomato, the baked onion, hummus on the bun, a few shreds of cheez and pickled jalapeno - melted some butter/garlic powder to brush on top of the halved sweet potatoes - I do love being a starchivore... lol

Nope, although I Only buy Organic rice and lentils so I don’t worry much about it… I do try to look for stones before cooking the lentils…
Years ago I actually broke a tooth on a stone that was in a tin of lentils!

I wash my rice to remove excess starch and make the rice fluffier and less sticky. I'm 90% Basmati mind you. And Carnaroli or Arboria for long cooks :)
