Supper/Dinner Time! What's on the menu ?

dinner last evening was spaghettini with spagh sauce/onion/garlic/olives/bell pepper - I also sauted the rest of the Ikea non-meat balls in a bit of Korean BBQ sauce - a few Indian masala potato chips, brazil nut, date for dessert

More enchiladas. I made the sauce by just blending BTB no chik'n with the brine left from jarred jalepanos, water to make 2 cups, and a Cubanelle pepper. I'll never buy sauce again!

I made a vegan buffalo soy curls dip for a football party and someone other than me actually tried it and liked it! I thought it was delicious, and I have been having it for dinner the past two nights with celery and crackers. It was made with chickpeas, silken tofu, hot sauce, nooch flakes, garlic powder, onion powder, a pinch of salt and cheez shreds. It makes a lot, so I am going to freeze the rest.

Indian for dinner last night - Jasmine rice in the cooker with raisins, fennel seeds, baby peas, garlic pwd, turmeric, cayenne, paprika - two Tasty Bites, one Chana Masala and one Bombay Potatoes - to a pot I added some extra frozen celery/onion/bell pepper and then a can of chick peas and spices and the Chana Masala and did the Bombay Potatoes one in the microwave - all delicious and satiating.

I was hungry when I got home as all I had today was a banana and avocado toast. I had a frozen pizza and added sweetcorn and pineapple for dinner.

I've made one with chickpeas before that was really good, it was baked . I'd like your recipe!

I was so hungry when I got home and nothing made, so I had a Beyond Burger--I think I may like this version more than the previous one! I did get a second bag on sale.
Don't understand why the new Italian sausage is so bad now. Anyone else have it? the avocado oil Italian sausage?

It has both. I tweaked this recipe, which called for three cans of white beans, which I didn't have, so I used a can of chickpeas for the initial blend and then half a bag of rehydrated soy curls, some of which I chopped a bit, to take the place of the second can of beans. Then I added the rest of the soy curls for the third can when I was ready to bake the dip. I really liked it. It's a keeper.

Leftovers; small plates:

Cream of smoked mushroom soup with yeast flakes.

Leftover savoy cabbage gnocchi with added Violife Mozzarella style cheeze plus a few smoked chipotle and yeast flakes plus a drizzle of
evo.

pesta gnocchi mixed together with sauted onion, garlic, bell pepper, can of Romano beans - it was very good and I used a small pizza shell and put on some leftover spaghetti sauce, garlic powder and a few shreds of cheez

I had a Boca chik'n patty on toasted homemade bread with pesto and a little vegan mayo; a side of air-fried fries and an orange.

Vemondo medaglioni in a rich mushroom sauce plus a sprinkle of yeast flakes, grated Violife Prosociano and a drizzle of evo. The delicious creamy sauce made up for the bland chickpea filling.

An orange.

I had a very late dinner as I attended the annual co-owners meeting. It was the first time in 4 years that I have attended.

I like Boca chik burgers. Moreover, they are very good value compared to some other brands.

I was just wondering do you ever serve them with either vegetables or potatoes instead of with bread?
 
I have decided that on the days that I do a big grocery shop I deserve take-out so that's what I did yesterday - back to the Hakka restaurant and so we ate very early as my honey didn't eat any brek or lunch and I just had a pita PB&J - eating at 4:30 makes for a verrrrryyyy long evening as we usually eat around 8:30 or 9:00. It was very good with a few leftovers.

Oh yes! Last week I had one with a little pesto on it and a pile of roasted veggies. I also chop them up and put them in a salad. And yes, they are a good value, though the price has gone up a bit. They are still cheaper than other brands, though. I've always like the flavor and texture of them as well.

Tonight I will have shepherd's pie made with seasoned soy curls for the protein and green beans for the veg.
