@shyvas mentioned couscous the other day so that's what we had last night - 2 onions, huge portabello mushroom chopped, zucchini, cherry tomatoes, chick peas (yes, I remembered them this time) and some Korean BBQ sauce - it was delicious
our July 1 celebratory meal was an Yves chkn burger on a toasted bun with hummus on the bun, spinach, tomato, cucumber, oelek and more cucumber and tomato on the side and some potato chips with hummus

I made some lentil, seitan steaks yesterday and froze them. Today I pan fried 2 with wine, onion, garlic and butter and roasted asparagus. Yummy steak and mushrooms.

Friday night we had a big bowl of popcorn and then a few chips and hummus.
Last night was capellini with spaghetti sauce and into the spag sauce I put, roasted garlic, onion, mushroom, olives and then topped with nutritional yeast and chili peppers.

Not sure what I am having tonight. I had to come home to CT check the mail, water the plants, take out the recycling, etc., and I'll soon be off to visit my dad at the nursing home. I'll be heading back to the beach after that, as tonight is bingo night, though I'll be watching my great-nephew Nolan, as he isn't quite old enough to be on his own, so I'll miss the first beach bingo of the season. But it's all good. We likely will play games.
I'm marinating some flat mushrooms in soya sauce, olive oil and pork seasoning. I'm going to have them with a beyond burger and some fries or roast potatoes.
last night we had Indian Tasty Bites on special rice and for dessert we have been having Welch's Juice Freezies.... no sugar other than juice and none of the chemical stuff or stevia either - they are such a nice treat
I had a wrap made with vegan sausage, lettuce, red onion, pickles and mustard with a side of tortilla chips. For dessert I had blueberries, cherries and red grapes.
