Supper/Dinner Time! What's on the menu ?

I grew up with 3 bean salad, yet never make it !
Can kidney beans, can garbanzos, about 2 cups cooked green beans, red onion in 1/4 cup each olive oil and 1/3 cup cider vinegar, Tbls mince garlic and chopped parsley.20250621_185131.jpg
 
I don't like to have a hot meal when it's scorching but had no time to make anything. I reheated some leftover (a very small portion)
Madras style soya curl & sweet potato curry with whole grain rice plus sliced bananas.

Fresh fruit.
 
found a recipe for tofu alfredo sauce and tried it with spaghetti - it was just okay - sauted onion and garlic, then put in lemon juice, nutritional yeast, salt, pepper and a cup of the pasta water and used the immersion blender - threw a few capers and juice on top with chili peppers - it was just okay - a bit lacking in flavour - have some leftovers so we'll see if it is better the second day

That sauce sounds good, and it should be tasty, but I think the pasta water takes away from the flavors of things. My mom will sometimes mix it with pesto for pasta, and I think it diminishes the pesto flavor even though it helps mix it with the pasta.

I'm having a Whole Foods meal of grilled mango tofu (this is really tasty), roasted asparagus and cauliflower and a corn, pepper and tomato salad. Half a vegan vanilla cupcake (also from WF) for dessert. I was on the road a lot and knew that I would miss lunch, so I stopped at WF on the way home for the meal because I was famished. Poor planning on my part, but in my defense, I had to go to the hospital (in RI) late last night to see my dad. He got sent there for what turned out to be a stomach bug. I was very happy it wasn't anything more serious. He is back at the nursing home, and I visited him today, and he was doing pretty well.

For me, the only thing that gives a cheesey taste is culturing--either adding soy yogurt, or culturing a block of tofu, or cashews
If you can't get soy yogurt, try getting some probiotics, or a couple tbls yogurt, and adding to blended tofu and letting sit in a warm place for a day
I haven't tried making rejuvalac, but that's supposed to be a good option
It's kinda been my latest hobby

That does sound good though. I've only had capers once and cant' think how they taste.
I always think of adding dijojn mustard to nooch sauces--and miso

mustard!! that's what was missing - I always have Colman's or Keen's as I use it a lot - that would definitely have helped

capers are so great - very salty, almost like pickles without the sweetness

last night I made jasmine rice in the cooker, Ikea veggie balls with some Korean BBQ sauce and steamed brussel sprouts and put a little sauce made from Colman's mustard, lemon juice and a bit of Vit C as fake lemon juice has none

yes, I agree - there was way too much pasta water and my honey did the final 'amalgamation' in the pot and kept adding more water... grrrr

I will be having more BBQ tofu with some of the leftover veggies from last night's WF meal. :) I ate all the mango tofu, hehe.

A cup of pasta water is far too much. I use a tiny amount just to thicken the sauce.
 
A not so warm potato & cauliflower salad with Dijon vinaigrette and yeast flakes.
Toasted baguette with Nut Luncheon.
Strawberries & soya cream with stevia (no aftertaste).


 
When you puree tofu and add it to hot pasta, it automatically becomes thinner.

okay, thank you - I will try that next time

we had the leftovers of this dish last night and it was very stuck together - along with some hummus and veggies and tortilla chips - celery, zucchini sticks, cherry tomatoes, stuffed olives

I'm going to use leftover BBQ tofu to make tacos. I'm going add, corn, red onions, arugula, a spash of lime juice and a little vegan mayo. I'm sort of making this up. Red cabbage would be great with this, I think, but I don't have any.
