Supper/Dinner Time! What's on the menu ?

oh man, way too much and it was all delicious - capellini with spaghetti sauce to which I added roasted garlic, mushrooms, green onions, olives and then I made myself, not one but, two Farm Boy miso tofu burgers (no bun just the burger) and had them on the side with a few thin slices of baguette - I don't know what I was thinking.... crazy

we had sauerkraut perogies with onions, garlic, mushrooms, jalapeno and a side of tempeh bacon and another side of sauerkraut (plus I drank some of the sauerkraut juice)

last night we had one of our 'brunch' food items for dinner instead - tofu scramble with green onions, mushroom, bell pepper, olives into a burrito with a few shreds of cheez and some salsa and a few potato chips and a Welch's juice freezie for dessert

Last night I had grilled tofu that was marinated in homemade Italian dressing (soooo delicious!), corn on the cob, four-bean salad and baked beans. I love summer meals! Tonight, I may grill a Beyond burger and some rosemary potatoes.
 
I shopped in a different No Frills yesterday and found some different Indian, ready to eat, and they were just $2.47 each and the Chana Masala was actually 'spicy' - the others were paneer or had butter so I bought 3 of them and we had one each on souped up rice last night - we really enjoyed them so I may go back and get more - for $2.47 you really can't go wrong and these ones you put the packages in boiling water instead of the microwave and I really like that.

I don't buy blocks as I find it too easy to eat more than is likely best so I always buy the shreds and can get away with using a lot less. I did check my local store and I can just see slices, no blocks at all.

Speaking of cheese, we had some on pizza last night (instead of Pad Thai - too lazy to drive to get it) - it was a "deep dish" crust NOT - and it turned out okay as I put on sauce, onion, mushrooms, bell pepper, olives, cheez shreds and thinly sliced Gusta Italian sausage.

I also made him a Betty Crocker carrot cake with Cream Cheese Icing (accidently vegan) - I didn't have any Just Egg so I made 3 flax eggs and used apple sauce instead of oil and it turned out okay, just a bit crumbly but the icing held it together.

I haven't been eating a lot of vegan cheese lately, but when I was eating more of it, I did notice that the Daiya blocks weren't on the shelves.

I'm going to have soy curls chik'n salad over a bed of greens and some grilled pineapple.
 
I am making an orzo salad for tomorrow. Orzo, onion, garlic, pepper, cannellini beans, spinach and tomatoes. I am going to add olives and cucumber. Lots of spices. Of course being a salad chilled for tomorrow.

I made more bean bread and used the rest of the pinto beans puree for brats
