Supper/Dinner Time! What's on the menu ?

Sunday night we had hummus/salsa cucumber, bell pepper strips, tortilla chips, a few bread sticks.

Last night I ate a rinsed can of chick peas with apple cider vinegar, a bit of soy sauce sauce, garlic powder etc and then a tiny bowl of noodles.

It's back!!!! I've missed this so very much.....yes I know gravy is easy to make.....it isn't as easy as a can is when you've made something and think how good it would be with gravy--and it's like $1.79.
Oh, and vegan....
In Canada they've stuck around as Franco American
 
Made more pintos, and made 4 patties with millet and vwg and jalepano

Yesterday I made baked pasta with red lentils dal in the sauce, like this, but more sauce and double lentils. Next time I will soak lentils as they weren't as soft as I'd like

I love chickpeas- they're one of my favorite legumes. But they do take a long time to cook fully. Early one evening in the past week, I put some soaked and rinsed chickpeas in my slow cooker, put it on "low" so I wouldn't have to worry about it foaming over, and went to bed. The next day, they were cooked perfectly (although it had taken at least 10 hours). I'd used more than enough water to cover them, so I added just enough elbow macaroni to soak up the excess and turned off the heat. Everything was ready to eat in 15 minutes.

Finally made the deconstructed egg roll people have made here. I used tempeh and half a block of tofu, onions ginger carrots garlic cabbage. Toasted some sliced almonds, and topped with green onion. I also broke up rice noodles and soaked

last night we had kind of breakfast for dinner - breakfast beans, sliced bread with Daiya gouda cheese slice, garlic powder, a few tortilla chips
Saturday night we had Basil Box pad thai and spring rolls, picked up on the way home from family reunion
Friday night I had gnocchi and apple sage sausage, garlic, onions, zucchini that I took with me to the reunion, they all had chicken, pasta etc and I took a huge Roma bread pizza, served cold

Some added veg would be nice with that.
I forgot to mention- I had some leftover broccoli (which had been cooked only until it was still bright green) in the refrigerator. I added it to the chickpeas I was eating- which both re-heated the broccoli and cooled down the chickpeas so they didn't burn my mouth. YUM. (I also forgot to mention the macaroni was overcooked- but at least the dish wasn't as soupy as it would have been. Note to self: next time, use brown rice instead).
 
my honey bought two portobellos and we cooked them into steaklike fillets last night - we kinda confused cooking them with cooking the king oyster mushrooms by putting another pan on top with some weight - even though it wasn't proper it actually turned out quite well - we used some better than bouillon stock and some Korean BBQ sauce, just enough to keep it moist and I baked some halved potatoes in the oven too - I just wish we had had more mushrooms as once they were sliced into nice thin strips there wasn't really enough to be completely satisfying - next time more - dessert was some Indian not-cheez cheezies and oatmeal cookies

edit: I forgot we also had some pickled beets... love them

my honey bought two portobellos and we cooked them into steaklike fillets last night - we kinda confused cooking them with cooking the king oyster mushrooms by putting another pan on top with some weight - even though it wasn't proper it actually turned out quite well - we used some better than bouillon stock and some Korean BBQ sauce, just enough to keep it moist and I baked some halved potatoes in the oven too - I just wish we had had more mushrooms as once they were sliced into nice thin strips there wasn't really enough to be completely satisfying - next time more - dessert was some Indian not-cheez cheezies and oatmeal cookies

I love portobellos sliced, breaded and fried...of course...I love everything breaded and fried lol.
 
Gnocchi with melted cheeze sauce (Violife, evo, cooking water, yeast flakes) with some smoked chipotle flakes, orange pepper and extra yeast flakes.

Sliced, peeled Roma tomatoes, sliced avocado, thin strips of smoked tofu plus evo ans smoked Maldon sea salt.

Apricots.
 
Yves chkn burger with hummus on the buns, a slice of tomato and slices of cucumber, half slice of Daiya gouda, oelek hot sauce, jalapeno peppers and a tomato cucumber salad with green onions and black olives - a Welch's juice freezie for dessert.
