Supper/Dinner Time! What's on the menu ?

A sandwich made with granary baguette, Flora, avocado and smoked tofu.

I was invited to a jazz concert in the town centre so had to go a few hours ahead of time due to heavy traffic. I destrung 2 pidges, went to
Land & Monkeys (saw a pidge having a few crumbs behind the counter) before going to the event.

I had the rest of my sandwich a few few white grapes when I got home. I had a bite of my friends salad which I didn't like because there was cumin in the chickpea puree. Moreover, it was a whopping 24€ for a tiny portion. So happy to have had a sandwich even if I don't like the latter for dinner.

A bowl of peas and cauliflower served at room temperatures with thinly sliced smoked tofu, a sprinkle of Sainsbury's barbecue spices, yeast flakes and evo.

A thinly sliced cucumber and avocado salad with vinaigrette and yeast flakes.

A Golden Syrup hazelnut baked pudding with soya cream.

A few grapes.
 
I made tempeh and fashioned the closest to a Reuben as I could--which was the thousand island and sauerkraut, but nothing else! It was on wheat, and no cheese.
There will be a vegan food truck near me this friday and I'm so craving a different kind of sandwich!
 
A black bean burger on a roll with lettuce, tomatoes, onions and mustard; half an order of fries from a food truck at the beach (my mom had the other half). :) I had a piece of dark chocolate with almonds in it for dessert.

How do you season the black bean burgers? I've tried to make them a few times, but simply don't like the taste. Strange, as black beans are my absolute favourite ones! :D

I love black beans as well. They are tied for my favorite with kidney beans. For seasoning, I use a lot of chili powder, like two heaping tablespoons, some cumin, garlic, onions, a little ketchup and a dash or two of hot sauce. I know you don't like cumin, so you would leave that out. I think I use three cloves of garlic, a small onion finely chopped and a tablespoon or so of ketchup.

I think that I added yeast flakes, chickpea flour, onion powder, smoked paprika et perhaps Aldi Mrs Dash style plus some liquid smoke to mine. However, I still didn't like the end result. Perhaps I'll try again.

You remember about the cumin! The other day, my friend had a salad at the concert and I'm so happy, I didn't order it. I had one taste of the chickpea puree and it tasted of cumin!

I made a couple of wraps as I had bought a reduced produce box at Lidl's and had plenty of vegetables.
I used the following ingredients; Mexican style jackfruit, sliced mini cucumbers, sliced avocado, sliced carrots, dices peeled tomatoes plus a sprinkle of smoked chipotle flakes and Tajin.

A few squares of mint filled plain chocolate.

I did remember, lol! I guess it depends on the flavor profile you are looking for. I wonder if a Montreal steak-type seasoning might work. I've thought about trying different spices with the recipe, but I love the flavor of the seasonings I already use. :D Black beans make such a nice base for a burger.

Tonight I am going to Boston to see Adam Ezra Group, and I will dine out at Veggie Galaxy. It will definitely be a splurge, lol. Vegan diner comfort food for the win! I may just do apps because I can't be carrying leftovers around. all day, haha. The portions are pretty generous for meals and sandwiches. They also have breakfast all day. :)
 
As much as I like beans, I don't care for bean burgers! I recently made some with black beans, just used poultry seasoning--thyme, sage, rosemary, some black pepper. I dislike the typical "Southwest" flavors that seem to be in everything black bean

I made tofu cutlets with the dense Costco tofu. dipped in soy sauce and breadcrumbs and Penzeys Singapore seasoning. I cut up the frozen broccoli cauliflower and carrot blend and some onion and made some fried rice in the same pan. I do love that big stainless pan!

I got home very late yesterday as I had to go into town to do a welfare check on a pidge plus a mini patrol.

A huge salad ; sweetcorn, smoked tofu, diced peeled tomatoes, fennel, avocado with vinaigrette and yeast flakes plus
thinly sliced beetroot on top.

Apple puree plus a few squares of mint filled plain chocolate.

Higgedy Piggedy quiche, This! Chickpea tofu, asparagus.

Really pleased with the quiche and tofu. Good firm texture. I'm not sure I'd spot that it was chickpea based on taste alone.
