Supper/Dinner Time! What's on the menu ?

Leftovers: Aubergine & soya curl Keralan style curry served with forbidden rice.

A finely diced cucumber and beef tomato (peeled and diced) salad with fresh herbs (mint, parsely, chives) with
vinaigrette and yeast flakes.

Seedless white grapes plus a few squares of mint filled plain chocolate.

Made a sauce of carrot, red pepper, celery, nooch and hummus blitzed up and served with rigatoni.

Basically pasta & soup. Very nice it was too ÷)

Pasta with spinach sauce and Linda McCartney Tomato & Basil meatballs.

The spinach pasta was great, but I'm not keen on the meatballs. It's odd - I used to like them, but I'm becoming really sensitive to the taste of pea protein in products these days.

For my taste it’s the processed oils that taste funny!
The Linda McCartney sausages I used to like, not so much anymore…
Lately I find that many prepared foods don’t taste as nice as I remember them!!

Cooked up pinto beans, then rice--in the Instant Pot, of course. Sauteed chunks of onions and orange bell pepper, added garlic and a can of diced tomatoes and half a Trader Joes soy chorizo.
Haven't bought vegan cheese in quite a while, but I'd sure like some for this.

A couple of Happyvore bangers cooked in the AF served with creamed spinach and a salad; finely diced cucumber, peeled chopped tomatoes, avocado, fresh mint and chives, vinaigrette and yeast flakes.

I'm not 100% sure, but I think it's the pea protein for me - I'm still very fond of Linda's original soy bangers (FTW!). Same as you though, my tastes are changing.

Trouble is, even though I'm tending towards a bowl of beans, veg and bread, I keep buying vegan products, especially new ones, because I see every purchase as a vote!

Last night we had Greek chickpea soup - this is a new recipe I tweaked and just loved it - it will be a regular. I added my home made miso and tahini to it to give it that extra special umami flavour.

Tonight we are having dan dan noodles, noodles with a sesame or peanut butter paste sauce - with tofu mushrooms and i am adding green beans cause i always need greens - yum

The idea of adding tahini sounds good to me--I've only recently discovered one I like-it's from raw sesame. Now I wish I'd gotten the bag of lemons I just passed up. I love a good chickpea, greens & orzo soup.

I finished the beans and rice thing and now sad because I have nothing else made, and it's only Monday :neutral:

I had some huge sweet potatoes that I cut into 2 inch slices and baked them in the oven - drizzled vegan butter/garlic powder/chives on them and cooked an Italian Field Roast sausage each and put on a bun with cheez shreds, mustard, ketchup, sauerkraut.
