Supper/Dinner Time! What's on the menu ?

an awesome newish meal last night - spaghetti agio y olio y cavolo... yup garlic/oil/cabbage - well not so much of the oil part - lots of garlic and cabbage with onion and capers - sauted the onion and garlic with chili peppers first, put aside, then added some water and cooked/steamed 1/4 green cabbage thinly sliced - then mixed both together and then added the cooked spaghetti - more capers and nutritional yeast for garnish and lemon juice too - delicious

I didn't have my noodley soup for lunch yesterday because I knew what the plan was for dinner.... Spicy Kimchi Dumpling Soup - oh man, it is so so good - cabbage, frozen veggies, soy curls, and kimchi dumplings - just perfect for a snowy cold night - for dessert, some Indian snacks and an apple streudal each...

I don't know what I'm having tonight. I may make a hand pie, as I have some crust in the freezer. I have leftovers, too. Decisions, decisions. :D

LOL, it's a small pie, basically it fits in your hand. I fill it with veggies, soy curls, tofu, whatever I have on hand. Tonight's will be broccoli, vegan cheese and vegan pepperoni if I do decide to make one.

@PTree15 @Emma JC I think I've heard turnovers referred to as "hand pies"- it would certainly fit, as the turnovers I've had are a pie-like filling sort of folded into a small crust and baked on a sheet.

I cooked the rest of my potatoes in my slow-cooker today. There weren't quite enough to really fill the cooker, but they should last 2 or 3 days. I'll surely have at least one for dinner, but much as I love potatoes, they won't do for a whole meal. I'll stop of at the supermarket on my way home for a dinner idea.

Me: "Excuse me-what aisle are dinner ideas in?"
(Store employee gives me a strange look)

Enchiladas. I really should make double, they go so fast. I got Aldi corn tortillas and they're 30 to a pack! I only make 13
Trader Joes tortillas are 12 and just corn

Soba noodles with stir fried grated cabbage, carrots, mushrooms, red peppers and tempeh, with ginger and a sprinkle of garlic plus
a drizzle of pomegranate molasses.

boiled a ton of potatoes and put them outside to cool (make resistant starch) and then air fried most of them - had an Yves chkn burger with thinly sliced raw zucchini (no cucs), tomato, hummus, a few cheez shreds, pickled jalapeno and oelek hot sauce - for dessert a brazil nut, 3 almonds and a few dk chocolate chips

Got the avocaco oil Beyond Burger at Costco as it was the end of their sale, and made one. I was surprised I liked it-the new formula sausage I hated. The avocado oil didn't mess with me either

I’m going to make something healthy tonight. I have a jar of red pepper pesto so I’m going to have some with Quorn pieces, red and green bell peppers, carrots, peas, tomatoes and sweetcorn. Like a stir fry but with pesto sauce.

we had snacky stuff last night - two Field Roast Apple Sage sausage cut into slices and topped with Colmans mustard - raw zucchini sticks, cherry tomatoes, whole olives, potato chips and all dipped into the little hummus cups - christmas bark and a brazil nut for dessert and then 3 cookies

I bought some Cubanelle peppers and will see how a homemade enchilada sauce will turn out. Recipes are all over the place, so I'm just going to blend the peppers with some Better than Boullion chik'n broth, onion, and thicken with cornstarch. The peppers are $1 a pound so better than over $3 for a can of the sauce I like

Any tips on green enchilada sauce? Not with cilantro though!

I probably should let my potatoes cool before I eat them all the time for this reason, but they're soooo good warm! At least I eat most of the potatoes I cook after they've cooled off; I almost always cook 8 or more at once (in my slow cooker).
