Supper/Dinner Time! What's on the menu ?

My friend from the garden flat came over for dinner and we had G&T's with green olives. Whole wheat mushroom raviolis (Vemondo) with sauteed mushrooms plus a Dijon and mushroom sauce plus some Violife parmesan style cheeze.

I also had a yellow nectarine for dessert.
 
Does your Costco regularly have Beyond? I think it's been close to a year since I saw them their--and they were without the avocado oil.

I'm making smashed vinegar and salt baby potatoes. Saw them doing it on Americas test kitchen and look so good. I'll have with a salad

Edit: Recipe I used called for apple cider vinegar :yuck:. Sounded bad, but I went with it--I would use white vinegar (malt is too pricey!)
Cooked potatoes in IP with the vinegar, and would do that to make potato salad
Yes, mine has had the Beyond burgers regularly. Yum on the spuds. :)

I think tonight I will grill a vegan sausage and have that with grilled potatoes. I need some greens, but I'm out of everything, so I think I will steam some frozen broccoli.

Too many mushrooms so I made a mushroom soup. Served with toasted walnut bread plus 1/2 of an avocado, a sprinkle of yeast flakes plus a drizzle of evo.

A nectarine.

Tonight, I’m concocting one of my favs… 1 chopped med sweet potato, a bunch of rainbow spinach, 1avocado, 2 med tomatoes, wholemeal noodles with soya sauce and a squirt of hot chilli, but I might add lentils too… it’ll last me for two or three days. Yum…😋

I'd forgotten about mushrooms and cooked wild rice blend--they were good, so I sauteed them with onions and topped with a spoon of mayo and garlic powder. The soy curls would have been good for this, but it was last minute :shrug:
 
I'm not sure what I am having for dinner as I have another concert tonight, this time it's Jerry Cantrell. I see that there are a few places near the venue that might have something I want.
I ended up with a lovely falafel platter at Claire's Corner Copia, which was only a 10-minute walk from the venue. It's a vegetarian/vegan place, so it was nice to have options. I also got a mini vegan chocolate loaf that had chocolate frosting that I put in the car to save for later. I just had a piece of it, and it's delicious.
 
last night was a chick pea salad with green onions, cherry tomatoes, olives, fresh basil, chopped kale, w/w pita and pickled beets on the side - dressing was lime juice, lemon juice, rice vinegar, soy sauce, garlic powder, cayenne powder, pepper, salt

I wish I had had some cucs or zucchini. Finished of the chocolate cake for dessert.

last night we had small soft w/w taco/wraps and I opened a can of pinto beans and mashed them in the pan, added the partial can of black beans from lunch, added salsa, cumin, garlic powder and then chopped cilantro and put into a small bowl along with small bowls of olives, cheez shreds, salsa and put it all together as we ate it - very tasty

Thursday night I baked 4 medium sized russet and 2 small sweet potatoes in the oven by cutting them in half and placing face down on parchment paper and also wrapped an onion and baked it too. Then heated up an Apple Sage sausage each with Colman's mustard on it on the side. No butter on the potatoes just malt vinegar, garlic powder, nooch, hot sauce - and a nest of sauerkraut under the sausage. Delicious.
