I made dinner in about 15 minutes last night and it was soooo good and satisfying - a pile of Ikea veggie balls sauted in Korean BBQ sauce - gnocchi boiled then buttered and garlic powdered. Topped with chili peppers, nutritional yeast.... for dessert brazil nuts, almonds, dk choc chips and roasted pumpkin seeds.
Broccoli soup and cucumber salad for dinner tonight—keeping it light and healthy. I’m trying to lose a bit of weight, so after this meal, I’m planning to fast for the next 18 hours. I’ve been following the approach outlined in this article, and it’s been surprisingly manageable so far. Intermittent fasting isn’t always easy, but I’m starting to feel the benefits, both physically and mentally.
I am going to have the other half of the veggie hummus wrap I got at the restaurant today. It was really tasty. It had avocado in it as well. I may have some tortilla chips with it, as I ate all the fries that came with the sandwich, haha.
Whole wheat spaghetti with seitan sausage onions and peppers. As much as I loved the sausage somehow I didn't think they worked with the spaghetti . To me the fennel taste got accentuated.
I really over ate!

last night was, once again, Taco Night and watch Survivor night - we added black beans to the 'smeat' again and so have some more leftovers for Sunday morning's brunch - had a few nuts for dessert
the usual delicious Saturday night fare only this time with whole wheat spaghettini, lots of garlic, onion, mushrooms, cherry tomatoes, kalamata olives and sprinkled generously and often with nutritional yeast and chili powder - dk choc cookies for dessert
another amazing 'chkn n egg veggie fried rice' last night - cooked up the rice and put outside for a few hours to increase the 'resistance' (starch that is), also marinated/soaked soy curls in smoke, soy sauce, poultry seasoning, garlic powder in the fridge most of the day, chopped garlic and onion in large pieces and put out about 1.5 cups of mixed frozen vegetables - fried up the 'chkn' in Korean BBQ sauce until browned and also browned 2 Just Egg patties and cooled them also - then turned it over to my honey and he did the rest - so good and lots of leftovers too
last night was leftover chkn n egg fried rice, combined with leftover pasta (chopped up), and a side of vegetable burger (no bun) with cheez shreds and pickled jalapeno on top - a few potato chips for dessert
