breakfast for dinner last night - I had some tofu on its last date so made a scramble with jalapeno, bell pepper and a few frozen veggies, lots of spices - also one Apple Sage sausage each and the scramble rolled up in whole grain tortilla wraps - so good
I think I'm going to try this recipe for cauliflower "steaks." It looks so delicious. I might have it with some crispy tofu and flatbread (which I need to make, haha). I baked some tofu cubes last night.

An air fried pea protein burger served with whole wheat spaghetti (IP) in a lemon (organic) & smoked chipotle sauce with smoked Cathedral City and evo.
I ordered a vegan gyro, grape leaves and rice. Its so good. I was craving a sandwich. I got my hub a lion's main "chicken" sandwich. I have half of my food for later.
Edit to add I did order from a local vegan restaurant. Their rice is the best rice I have ever put in my face.
Stir-fried tofu, onion, garlic and zucchini, in olive oil with ginger and soy sauce; served on boiled-to-reduced pasta and carrots, with green spices, salt and pepper. Simple is better.
last night was leftovers and picky stuff - a bit of pasta from Saturday night along with a leftover boiled potato on which I put some leftover spag sauce - hummus and salsa in a bowl for dipping, cut up to zucchinis, salt and peppered them, then dipped them in the hummus/salsa along with some tortilla chips - for dessert a small combo of dk choc chips, brazil nuts, almonds, pumpkin seeds both raw and roasted

smoked chipotle flakes, a sprinkle of yeast flakes plus a drizzle of evo.
I had a late lunch of a big salad and some cornbread, which I couldn't resist eating, even though I was supposed to save it for chili tonight, haha. Sooo, I might have a smoothie later, as I'm not the least bit hungry now.
delicious dinner last night - I made the Big Mountain Fava Bean Tofu again in the air fryer stove - broke the block up into pieces, in the afternoon, and marinated it in Korean BBQ sauce, soy sauce, apple cider vinegar, some spices and corn starch - in the air fryer for 15 minutes - meanwhile made a pot of jasmine rice and set it outside to cool (it is still quite cold here) and then my honey chopped up some garlic and mushrooms and we sauteed that with some frozen mixed veggies and then added sauce and the rice and then served it with the tofu on top - so good
