Supper/Dinner Time! What's on the menu ?

This ^^^^ is right up my alley - what a great recipe, I never thought of using tofu as a creamy sauce and to combine it with kale and spinach is such a great idea as I have a hard time buying large amounts of basil other than buying the plants themselves at the end of summer when they are cheap..
I vaguely half-remember posting something about this before.... but have you tried growing basil indoors? Since you're already buying the plants, and they're probably blooming by late summer, you could leave them out where they'll get pollinated before you have to bring them in when the weather gets cooler. Then just plant the seeds, and you'll have new basil plants when the original plants have died (or been eaten). I was just googling about this, and it's supposedly not hard to do. Basil does need a lot of bright light though, so if you don't have a sunny (at least part of the day) window, you'd have to use artificial lighting- and it would probably be more trouble or expense than it's worth.

I don't think I've grown basil, but our landlord (back in the '60s) used to. There are different varieties of it- but his smelled AMAZING. At the time, I didn't know what it was.

Aubergine & soya mince baked topped with Cathedral city served with a tossed batavia, spinach, baby tomato salad plus
vinaigrette & yeast flakes. A slice of toasted artisan style granary bread.
Orange salad
Tom Collins cocktails with green olives and amandes for pre dinner drinks.

My friend came over for dinner so I have leftovers for today's lunch.

I would love to grow my own basil @Tom L. - however we face north east which means that in the winter time we get no sun at all and in the summer we have it only from early morning until about 10am.... I do buy 2 or 3 plants and freeze the basil in ice cube trays, it just doesn't last the whole year, maybe I will buy more this year and make sure there is enough.

Last night we had breakfast for dinner, tofu scramble in whole grain tortilla wraps - green onion, jalapeno, bell pepper and crumbled sausage in with the tofu - they were delicious and 3 oatmeal cookies (store bought) for dessert.

oh man, we had the Yves chkn burgers again last night with air fried sweet and yellow potatoes - so good - on the burger we put sliced tomatoes, spinach, cucumber slices, oelek and hummus - a few corn chips for dessert

last night's dinner was a HUGE bowl of popcorn with butter garlic powder/onion powder/cayenne

oops I forgot to tell you about dessert... banana splitish - cut banana in half lengthwise - thawed cherries, pineapple, strawberries, blueberries, black berries, raspberries - melted dk choc chips and added some maple syrup and peanut butter powder - oatmeal cookies crumbled - some peanuts - piled them altogether... waaayyy too sweet for me and yet I ate it all grrrr

last night we made pizza spaghettini - instead of meatballs we used the second half of the Gusta's pepperoni that we had leftover and it was very nice - lots of roasted garlic, onion, mushrooms, bell pepper too

Baked falafels in a homemade naan, with soy yogurt, pickles and red onions :lick:
I'm going to make chickpea cutlets for dinner tonight with leftover roasted potatoes and a small spinach salad.
I need to make those with the same seasoning I used for the falafels. Greek seasoning blend from Aldi, lots of garlic and parsley
 
Boiled potatoes with evo and smoked Cornish sea salt plus af seasoned soya curls ( Bay seasoning, smoked paprika, onion)
Deglazed with apple cider vinegar.

I don’t know what I will have for dessert.
