Supper/Dinner Time! What's on the menu ?

Sauteed courgettes, red peppers,peas and soya curls with Teriyaki sauce and 2 grain quinoa.
A tossed romaine salad with vinaigrette and yeast flakes.
Strawberries & bananas with soya cream.

last night I was still full from lunch so had a w/w pita cut into triangles, zucchini sticks, tortilla chips dipped in hummus and the bit of leftover pasta from Saturday night - for dessert dk chocolate chips, one brazil nut and 3 almonds

Last night I had Gardein 7-grain tenders with sautéed cabbage, pickled beets and four-bean salad. Tonight I'm going to have buffalo soy curls, more pickled beets and a salad with Italian dressing.

dinner last night - oh my it was good - found a 10lb bag of sweet potatoes for just $5 and so cut 4 small ones in half, along with 3 small yellow potatoes and a large onion and put them face down on parchment paper and put them in the oven, late afternoon at 300F and let them just cook away - then I made the Yves Chkn Burgers on a bun with hummus, spinach, tomato slices, oelek hot sauce - also melted some butter and put in garlic powder and chives and lightly rubbed in on the potatoes - did I mention it was really good?

Buccatini pasta with marinara (from Aldi), chopped up Beyond Burger,baby bellas and red onion and green olives
Buccatini is odd-it's thick and hollow so like slurping up a straw. Good sub for Udon noodles, I'll see if they still have any and buy more

made masala curry with chick peas, veggies, small can of coconut milk, some water, spices, chopped cherry tomatoes on gussied up rice with raisins, fennel seeds, spices - it was very good

Leftovers: Whole wheat linguine bol with added courgettes made in the IP served with yeast flakes, evo and melted Cathedral city.

A tossed batavia salad with flat parsley leaves, vinaigrette & yeast flakes.

Apple puree with a few drops of vanilla and soya cream.

pizza night last night - Gusto has a specific pepperoni replacement and I don't usually buy it as it is more expensive than the sausages - I did buy it last time out and the difference is the strength of the flavour, it was very good along with the mushrooms, green onions, bell pepper, green olives, pineapple and cheez shreds

I had a pretty substantial breakfast and lunch today, so I'm having dessert for dinner: chocolate-peanut butter tunnel cake from the freezer.

Simplest sauce too--just a roux with olive oil and flour, the soy whey, a lot of nooch and enough water to get what I wanted. Seasoned after cooking. Better than the recipes I try and follow

That sauce sounds really good, @silva.
 
If the weather clears up (it was supposed to by now, but it's still raining, blah), I will grill a vegan sausage and have it in a bun with sauerkraut, mustard and onions.

roasted zucchini: just sliced up and tossed with olive oil, salt, pepper.

I like cucumbers with a little dipping sauce made of yeast-flakes and olive oil. i just wing it; little oil added at a time till it's right.

I'm drinking pure Kemmun black tea, whole leaf, in my Ember temperature controlled mug. First brew of the leaves right now. Brewed 34 grams in 34 oz of boiled, purified, filtered water (to which I added a special set of minerals back in) at 190 degrees for three minutes. It smells like the melody of an oboe, and the Western style of brewing added a touch of bitterness -- tasting of a bassoon.
