Supper/Dinner Time! What's on the menu ?

there is no such thing as too much garlic in our household

last night I threw together a pinot bean/mung bean dahl soup with root veggies from the fridge and some frozen veggies and half a can of whole tomatoes, spices, leftover potatoes from the fridge and we ate it with 1/4 baguette - enough of it leftover that I will add another can of beans, the rest of the tomatoes and potatoes and have another meal tonight...

Whole wheat cepe mushroom ravioli (Lidl) with a mushroom sauce made with white wine, golden oxo cube, Dijon mustard, soy cream and seasoning served with a sprinkle of yeast flakes, a drizzle of evo and grated Cathedral City plus a few smoked chipotle flakes.

Toasted ciabatta with Flora and Applewood.

I couldn't agree more on the garlic. :D

I'm having a mung bean just egg omelet with olives, spinach, onions and vegan cheese along with a side of air-fried potatoes. I think I could eat this every day!

as predicted - I added a can of pinto beans, and the rest of the whole tomatoes and leftover potatoes to my soup, from the night before, some more water and garlic powder and added a few croutons and some nutritional yeast and hot sauce - so good - a sliver of blueberry cheesecake for dessert

My vegetable garden isn't producing yet- I haven't planted any "early" vegetables so far this year. I found out some time ago that a common non-native wildflower- Campanula rapunculoides- is edible, although excessive amounts can cause some unpleasant (although non-lethal) effects. The only other thing I could find out about it (nutritionally) was that it has vitamin C, and I've had it before; it grows rampantly in my yard without any encouragement from me. So today I invented Pasta primacampanula: elbow macaroni cooked with harvested and rinsed bellflower leaves and stems, with 3 chopped cloves of garlic and about 2 tablespoons of canola oil. It's not bad- but IMHO, kale, spinach, broccoli, lamb's-quarters (AKA wild spinach), or garlic mustard are much better.

it was perogi and tempeh bacon night last night - boiled and then pan fried the perogies in butter, topped with sauerkraut, nooch, hot sauce

Gin cocktails with green olives and tortilla chips by the river bank. Our usual table and bench wasn't occupied. People over here don't usually
sit outside with drinks for some reason.

I had a Jerusalem artichoke with vinaigrette for diner followed by an asparagus & soya curl buckwheat risotto with grated Cathedral City plus a drizzle of evo and yeast flakes.

A pear.
 
I have some of the Unmeat brand, the vegan spam/luncheon meat and the roast beef. I was going to have the spam. I'm not sure what to eat it with.

we made an amazing fried rice dish with tempeh bacon, Just Egg cut into bits, onion, garlic, mushrooms, baby peas and Korean BBQ sauce, jasmine rice - ate every bit of it...

this morning my honey came up with an awful sounding name for it.... Mung Bean Soy Fungus Fried Rice, lol

I know I "laughed" at the name your hubby gave your meal, but it really does sound delicious. So I was torn between a laughing emoji and the "love" emoji. :D

Dinner tonight will be Chinese. I am meeting my cousin and my sister for a girls' night out. :) I checked the menu, and there are several tofu dishes that would work for me. Happy, happy.

last night was lots of raw veggies night - celery sticks, zucchini sticks, cucumber sticks, green onion, jalapeno stuffed olives all dipped in hummus and some tortilla chips dipped in the hummus and salsa - I feel so much healthier now :D

I'll be having the last of the Chinese food from the other night: tofu and broccoli in a nice sauce. I would go back to that restaurant again. The prices were very reasonable, and they provided a ton of food. I got three good dinners out of it.
