Supper/Dinner Time! What's on the menu ?

I cooked chickpeas, wild rice blend and kale and had with some mayo I made with aquafaba.
I now am officially done with that vile liquid. I didn't want to open a soymilk carton so tried the chickpea liquid again. This time it at least tastes good, but it takes almost double the oil to thicken.

I don't know why that ever caught on as it makes me feel sick to even think about it.

we wanted just a pick-up supper last night and then I decided that I wanted to try the 'bake the tofu' idea again so we did have zucchini sticks, bell pepper sticks, cherry tomatoes, olives and breadsticks dipped in hummus and I mixed up some Korean BBQ sauce with a bit of sesame oil, garlic powder and cayenne and brushed in on tofu cubes and baked them in the toaster oven, turning over and brushing again half way through - they were much better than last time and were a nice side dish for the veggies

I had a wonderful cold soba noodle bowl from a restaurant yesterday. It had a very mild tahini dressing and it was full of kale, purple cabbage, carrots, Brussels, slivered almonds and cucumbers. I will make something like this at home. It was just delicious!
