Supper/Dinner Time! What's on the menu ?

Leftovers, small plates:

Ww linguine bol style with Violife parmesan/evo.

A chicory and beetroot salad with vinaigrette/yeast flakes.

Toasted artisan sourdough with Flora and camemvert cashew cheeze.

A doughnut peach plus a couple of squares of mint chocolate.

Monday night we had just salsa/hummus breadsticks and a few tortilla chips with prunes for dessert.
(we watched a youtube video about prunes are so good for gut health)
Last night was a huge fusilli pasta dish with onion, garlic, mushroom, olives and Gusta ground and spaghetti sauce - so good as we were both starving.

Last night I was able to get a delicious cheese-less pizza at the restaurant we went to. It had marinara sauce, tomatoes, garlic and basil leaves. I couldn't believe how good it was and that it was on the menu as cheese-less. My mom and I shared that pizza, as she is trying to cut down on cheese.

I prefer cheese-less pizza these days.

Last night I had a salad topped with a chopped chik'n patty and EVOO and red wine vinegar. I also had an ear of corn and veggie bake that include eggplant, zucchini, tomatoes and onions. The juices from the veggies mixed with herbs and a little EVOO made for a tasty dish. My nephew's SO made the veggie bake. The recipe calls for mozzarella, but it was delicious without it. I don't even think I would add vegan cheese to it.

I just had a Quorn "meat" sandwich but it was quite early so I will have some snacks watching the World Cup tonight. It will probably include a bowl of ice cream as it is so hot!

A Happyvore pan fried burger served with creamy mash. The burger was really tasty and very similar to Green Cuisine which are one of my favourites. Much tastier than BM.

I had a webinar which ended at 10.15pm and was till hungry so I had a chicory salad with vinaigrette and yeast flakes.

Dinner last night was just some tortilla chips and hummus, as I had a very filling lunch: a soy curls gyro with vegan tzatziki sauce.

Wednesday night we had another Beyond Burger with a side of leftover fusili pasta from the night before.

Last night I made perogies with lots of onion, mushrooms, garlic and sliced Field Roast Italian Sausage, yum.
