I made a mixed dal, pinto bean, vegs, and millet soup with the veg broth I made intending to simmer the seitan in. I baked it instead
we each had the dollar store spicy kimchi noodle soup bowl to which we added soy curls, lots more frozen veggies, kale and, hmmm yes, another block of noodles .... so satisfying, spicy and tasty
I had bean dip and tortilla chips. I made the dip with refried beans, silken tofu, taco seasoning and vegan cheddar shreds. I also topped it with sliced black olives and chopped onion.
last night I had a vegan burger, a vegan sausage, a jacket potato, a Yorkshire pudding that I found in a health food shop yesterday, along with some steamed veg. Very nice and warming in this weather.
our brunch yesterday was large and late so we split a bag of potato chips and dipped them in hummus/hot sauce and for dessert some dk tiny chocolate chips, almonds and a brazil nut
I'm craving pizza, so I'm going to make one with pesto, onions and black olives. I don't have any melty vegan cheese, so I'll just use vegan grated parmesan. I think I will have a salad with it as well.
