We had some vegan blue corn tacos made with oyster mushrooms at Casa Azul in Brighton.
( shyvas' post only partially quoted) Yep! Native Americans have developed quite a number of different varieties of corn. I've eaten blue corn (and even grew some once!!!), but I don't think it tastes different from the usual yellow corn. Since I'm vegetarian, I would have thought I'd be more sensitive to different tastes of vegetable foods! I think it has more of those anthocyanins that are supposed to be good for us, though.

This isn't Pork bangers served with a small baked potato with Flora plus a cabbage slaw with diced avocado, Dijon vinaigrette and yeast
flakes.
These bangers must be the best ever.

Brixton Blue with rosemary crackers.

Tropical fruit jelly with soya cream.

I ran errands today in RI with my mom, and then I came home kind of late in the afternoon, so I'm having a Beyond burger on a bun with red onions, pickles and mustard, plus a handful of potato chips. Yesterday I had nachos with refried beans, vegan cheddar shreds, onions, black olives, banana pepper rings and hot sauce. They were so delicious. Perfect (American) football food. :D

Me too, I usually discern most taste differences but I don't think blue corn tortillas were much different. Well, other than they were the healthier kind 😆
Ever had a blue potato? They too are better due to anthocyanins, but they do taste much different. Like I could "taste" the "blue" o_O

pretty disgusting meal last night - I over airfried the fava bean tofu that I spent ages marinating and then putting a coating of flour and corn starch on... they were hard and the soft centre wasn't even really there as it dried from the outside in......... so awful and served on a bed of plain couscous so even that was just barely edible/dry.... oh well, I guess making something truly awful makes you up your game?

I can't remember having any blue potatoes... yet I have a vague feeling that I did have them once.

I don't know what it is about fava beans. They're quite interesting-looking, and I once bought a pound or so of the dried beans at my local health food store- I'm often on the lookout for new flavor sensations! As I recall, they were kind of expensive as dried legumes go. I can't remember exactly what they tasted like, and they didn't make me sick, so I finished them. But the taste just seemed... off.. to me. Maybe with the right seasonings, they're not bad; I forgot what (if any) seasonings I used... probably garlic, and maybe some cayenne or savory?...

Googled it, but never heard of it before. I’m really getting an education in this group

I've had blue corn tacos, chips and also tortillas in both the US and the UK. I remember my late cousin in California who's most favourite style of corn was the white variety. I don't know whether it's called flour corn or just white sweet corn. It tastes far sweeter compared to the yellow variety. Corn tastes far better in the US compared to the variety we have over here in Europe.

All I can say, is that either there isn’t much variety in Aussie compared to other countries, or I’m just not too adventurous with foods…

our most popular corn is peaches and cream corn - very sweet and tasty

last night we had Indian ready to eat - to one (spicy channa masala) I added a can of chick peas and mixed frozen veggies and the other was Bombay potatoes - ate with a w/w pita - for dessert some indian not-cheezies

@silva My curiosity was aroused by our brief conversation about potatoes, above, so I googled "how many varieties of potato worldwide". The answer, according to the International Potato Institute: more than 4000 edible varieties, mostly in the Andes (which makes sense, since they were domesticated there):
