Supper/Dinner Time! What's on the menu ?

I have been rearranging my cupboards as I have been at home the past few days with a cold and I found some (ramen) noodles I completely forgot that I bought. I'm having them tonight with various stir fried veggies.
 
Made a chili with black, kidne, pinto beans and red lentils. I worried about the cook times. Didn't soak, but black and kidney started at 11 min, NPR. Then added pintos and lentils for 12. Then added celery and onion and blended up 2 habenaros and one fresno chili for 6 min. After cooking added a can of fire roasted crushed tomatoes. A spoon of blackstrap molasses
 
I used the black beans from the crock pot to make a black bean 'and ton of veg' soup - carrots, cabbage, onion, potato, yellow zucchini, some frozen green beans and corn, spices - it was a huge pot and it was very tasty with both some beans and some of the soup leftover.

In my experience, those first 3 kinds of beans all take roughly the same amount of time to cook, but lentils (and split peas) cook very quickly and generally aren't soaked. I've read (and believe) that soaking shortens the cooking time, but I haven't experimented to find out if this is true. I've also read that very old beans take longer to cook than not-so-old, but again, I have no personal experience about this. I get most of my dry beans at the local health food store, and they do brisk business. I get the impression that their dry legume stock doesn't stay around for a very long time.

In any case, that chili sounds amazingly good! (I never thought of adding molasses to chili... I used to drizzle it on oatmeal sometimes.)

It was a last minute thought to add it, I was about to put in a Tblsp of brown sugar (big pot) but thought about my son liking molasses, and it's supposed to add that 'beefy' quality. I probably added 1-2 Tblsp. I can't discern it
I kinda wish I'd put some effort into making it as all the beans and veggies were overcooked.
Oh geez! I forgot corn. It needs corn. Diced tomatoes would also be nice
 
Welcome to the boards, @VegetableLiker ! Although I don't avoid cooked food, I like carrots better raw than cooked. When I had adopted pet rabbits, I grew carrots primarily for them, rather than for myself. They ate them tops and all, but I fed them a variety of foods: it seems that carrots have a bit more sugar than is good for rabbits to have them as a primary food.
HAHAHAHAH, thanks for the warm welcome Tommy!! Yeah, rabbits RULE, they show up around me and my friends garden from time to time and I just let them take what they want, so long as they don't get too greedy AHAHAHAHAHA. Those fuzzy little dudes are ADORABLE!! And yeah, I've heard that too many carrots aren't the best for them, blame Warner Bros and Bugs Bunny for THAT propaganda I guess :laughing:🤣😂
 
I didn't really have any dinner as my friend in the garden flat, invited me over for gin cocktails and nibbles. We had some green olives, lemon/spicy crackers and artisan style tortilla chips.

When I got home, it was far too late to cook so I had a wedge of Applewood and a mandarin. It's after midnight and now I'm obviously hungry but am off to bed.
 
I made a pumpkin curry with onions, spinach, potatoes and an old half bag of mixed veggies I found in freezer. I used so many spices, garlic and serranos chilis, but I really feel it's missing a flavor/texture. I think I'd like some green apple in it. I do have those canned onions that make things much better.
It sure did clear my sinuses 🫨

simple bean dip - mashed a can of pinto beans in the pot, added salsa, spices, olive - pickled jalapenos and cheez shreds on top - hummus on the side and scooped them up with blue corn chips - store bought oatmeal cookies for dessert
