Bean and lentil casserole from my freezer stash, just need to do some mashed potatoes and some fresh greens to serve with it.

I have lentils, but I'm too lazy to cook them.
But that sounds delicious.

I went out for dinner and had zoodles in arrabiata sauce and melted cheeze which I didn`t enjoy.
A freshly baked bread roll with evo.
Craig`s vanilla cashew ice cream which tasted fabulous.

Yesterday I had buckwheat mixed with tomatoes, onions, beans, chilli flakes; topped with mustard & lemon juice. I put some leafy greens on top, alongside whole grain bread. Very nice. For dessert: I took a slice of the whole-grain bread, spread almond butter and banana on top of it, added dates, cashew nuts, and tahini on top. Also very nice.

I'm grilling cauliflower steaks on the barbie tonight. I will make a big green salad to go with it. Simple and delicious!

last night was pizza night - had a bread pizza base in the freezer, warmed up some Field Roast Chipotle sausage and crumbled it, pineapple, mushroom, green onion, green olives, spicy banana peppers, cheez shreds

Roasted mushrooms, new potatoes with our special sauce (Soyghurt/vegan mayo/mango chutney) and a green salad with chopped walnuts, pumpkin seeds, sunflower seeds and an Italian style dressing.
Fresh fruit salad.

I had half a wood fired hot and spicy pizza from M&S. Lush! I haven't tasted it before. Quite hot too.

1. tofu stir fry
2. tofu veggie and pasta
3. Jackfruit and slaw
He chose jackfruit and slaw. Red cabbage pickely slaw and crockpot bbq spicy jackfruit. I might walk up to get some cuban bread to make sandwiches.

we also had rice and beans - 1/2 can red kidney and full can of white kidney beans, a mix of basmati and jasmine, garlic, onion, jalapeno, bell pepper and lots of spices... delicious and there are leftovers

It's washing day today, so something quick. Tinned lentil and vegetable soup with a large hunk of seeded crusty bread.

A smoked paprika af Quorn breast with a broccoli cashew bake plus a tossed romaine
heart salad with vinaigrette and yeast flakes.

Brambleberries and mango with Forger`s cashew probiotic yogurt plus sweetener.

I had the rest of the pizza for a late lunch with a big salad so I'm very full up.

I was going to do mushroom "pizzas" with sauce, veggies and vegan cheese on top. I will see how I feel later.

I had a sub bun with Daiya provolone and the hot ratatouille. Quite good

A couple of days ago, for dinner- I had buckwheat mixed with chickpeas, onions and tomatoes, topped with leafy greens and a simple mustard & light soy sauce dressing, and whole wheat bread on the side. For dessert: my staple mix of banana with dates, dried fruits and nuts (I used walnuts), topped with Tahini. All very good.

Yesterday I had a vegetable powerhouse soup - with leafy greens, onions, potatoes, carrots and tomatoes- accompanied by whole grain bread. For dessert: I had another slice of whole grain bread and spread banana on top of it, and topped it with dates, dried fruits, nuts and tahini…all nice
