Supper/Dinner Time! What's on the menu ?

last night was leftover Friday - we had some rice/indian from a few nights ago and some boiled potatoes so I opened another Tasty Bite Channa Masala and put in two cups of baby peas, the chopped up potatoes and we had a whole meal from that - it always feels good eating leftovers as I remember my mother's fridge, when I was a kid, that was always chock full of leftovers that were never eaten - nuts for dessert

boiled 4 potatoes and then opened a can of Heinz chili beans (combo of kidney and pinto in tomato sauce) and heated it up adding 1/2 can of pinto beans and then just poured the mixture over the potatoes and enjoyed - simple, easy, tasty and cost about $2 total for the meal for the two of us - the can of Heinz was $1 (on sale), the half can of pinto was about 70 cents and the ten pound bag of potatoes cost $2 so 4 potatoes was 30 cents max

I had my big meal at lunchtime, so it was an Impossible burger from Burger King and a small bag of potato chips. Tonight I will have leftover maple-glazed tofu, an ear of corn and steamed broccoli.
 
Vivera pb Salmon fillets tonight, fried up with dill, lemon, garlic and served with potatoes & veg.

I normally steer clear of fish substitutes, but I'm glad I took the plunge because they were fantastic. The texture was spot on, and while the taste was subtle, at least it wasn't reminiscent of bladder wrack like other brands I've tried.
 
I finally learned the method of cooking potatoes the night before! I was so hungry when I got home I immediately made a potato salad with celery onion and yellow pepper, with my mayo, dijon mustard and salt & pepper-and black salt at serving. Then I had a mushroom seitan sandwich and handful of chips. Yep, I had a handful :up:
Now I am very full
