Supper/Dinner Time! What's on the menu ?

I made a bean and lentil chowder. Cooked the pintos for 15 min in IP, let sit probably and hour, then used immersion blender to blend just a bit. Added carrots, celery, onions, potatoes, and lions mane mushroom powder, thyme rosemary coriander, BTB no chik Boullion, & more water, set for 4 min. Added corn when finished. Again, should have had kale 🙄
 
our brunchtime meal was so big we weren't too hungry so just made pita pizzas with sauce, cheez shreds, Yves pepperoni, green olives, hot sauce and a brazil nut and a couple of store bought oatmeal cookies for dessert

Something different- Swiss chard, sweet potato, and baba ganoush. The produce market had eggplant 2 for $1. I found the reason I didn't like the dip was the tahini. The Lebanese don't use it in their recipe and I always like it there. I did roast the garlic - I think it's usually raw?
I made a pretty bread yesterday with oats, pumpkin seed, flax seeds, and mostly whole wheat flour

one of our favourite meals last night - Spicy Kimchi Dumpling soup - so easy and yet so tasty - lots of frozen vegetables, lots of soy curls, kimchi dumplings and a drizzle of tahini on top - oh yes, and lots of red cabbage too

Lunch today was simple but good: elbow macaroni tossed with big fresh broccoli stalks and canned butter beans, drizzled with a bit of canola oil and a little of the liquid from the beans. (I cooked the broccoli first, took it out when done, and cooked the elbows when the water was sufficiently heated up again). Eaten warm, not hot. I probably won't want a big dinner! I'll have leftovers tomorrow sometime.

leftover pasta from Saturday night, added to leftover beans (black and kidney) from yesterday's lunch, mixed together with 2 tofu miso burgers chopped up into pieces - so good - then for a snack some chips and hummus and then I bought a frozen vegan blueberries cheesecake (Sweets from the Earth) and it is dense and heavy that I will likely get 4 or 5 meals/desserts from it - we each had a small piece of that

most delicious sweet potatoes halved and placed face down on parchment paper and baked, steamed brussel sprouts, IKEA veggie balls in a bit of Korean BBQ sauce - some garlic butter for the top of the sweet potatoes, Colman's mustard/lemon juice sauce for the brussel sprouts - for dessert another small piece of the blueberry cheez cake
