Supper/Dinner Time! What's on the menu ?

Dinner is TBD today because I have a wake to go to later in RI. The mother-in-law of one of our good beach friends passed away at age 98. So I'm thinking we may dine out after the wake, maybe Chinese food.

we had our usual delicious Saturday night spaghettini with lots of garlic, onion, mushrooms, olive, cherry tomatoes - 1/4 w/w baguette thinly sliced and for dessert I took oatmeal cookies and put peanut butter on them and made a sandwich with dk chocolate chips on the peanut butter and microwaved them for one minute - so yummy

last night I cubed a block of fava bean tofu, marinated it briefly in soy sauce/vinegar/garlic powder and then sauted it in a frying pan instead of using the air fryer like I normally do - added Korean BBQ sauce to it - reheated leftover falafel, cut up some cucumber and dipped all, plus some cherry tomatoes in hummus/hot sauce - a few potato chips for dessert

How is the fava bean tofu? I just saw that Plant Based Bistro made a tofurky-type roast using it.

I'm going to have chickpea cutlets, mashed potatoes, broccoli and cabbage for dinner -- and maybe some bannock bread.

Creamy scalloped potatoes, braised carrots plus a few slices of smoked tofu.

Soya yogurt with a few drops of salted Cornwall caramel plus some Speculoos biscuits.

Last night I took out the frozen chili from the freezer and added some water, corn meal and a can of kidney beans and then boiled up a ton of potatoes and served the chili over the potatoes. There is still some left so may make chili burritos tonight.

I had a Thanksgiving theme dinner:

Lentil & oat loaf served with red wine & rosemary gravy, creamy mash (evo) peas and braised carrots.

Soya yogurt with a few drops of salted Cornish caramel, Speculoos crumbs plus sweetener.
 
I will be having leftovers: vegan holiday roast with gravy, mashed potatoes, stuffing, sweet potato casserole, turnips, green beans, glazed carrots and cranberry sauce.

Thanksgiving style turnovers made with leftover lentil & oat loaf, roasted spicy butternut squash, wine gravy plus a huge
sprinkle of smoked paprika. I also gave one to my neighbour who is travelling on a train this morning. She'll have it for her lunch.

A lentil and grated carrot salad with Dijon vinaigrette and yeast flakes.

1/2 apple plus a few Speculoos biscuits.
