Supper/Dinner Time! What's on the menu ?

Leek & cauliflower soup plus a sprinkle of yeast flakes and evo (from the freezer) served with a toasted ciabatta sandwich (AF) made with Flora, Dijon mustard, a slice of La Vie pink protein and a large slice of Applewood. It's not my favourite kind of diner but I wasn't in the mood to cook.

Soya yogurt with sweetener plus a huge dollop of mango puree.
 
Has anyone ever tried frying silken tofu? I don't know why I haven't tried it before, but I saw a recipe on YouTube and decided to try it for dinner last night.

I decided not to use their sauce. Instead, I made a sauce using a mix of gochujang, soy sauce, rice vinegar, sesame oil, maple syrup and fresh minced ginger and garlic. I used some spring onions too. I lightly fry the white bottoms with the sauce and garnish the finished dish with the green tops.

I was pleasantly surprised by the silken tofu. It was amazingly delicious, with quite a pleasing texture. While not as easy as regular tofu to work with, I would definitely make this again, nonetheless.

It splatters a lot in the oil when frying. I had some sticking issues as well, but overall, it was awesome. I can post the video if anyone is interested in trying it.

I tried that once, but honestly didn't give it much attention. Did you bread/flour?
When my kids were little I used to saute slabs of firm tofu in butter, then sprinkle with either cinnamon sugar or powdered sugar

Have you made vegan halloumi? I tried this recipe, and frying it right away wasn't good, leaving it in fridge overnight fried nice custardy slabs. Pretty bland, not sure how I'd tweak the seasoning. I don't know Halloumi . Vegan Halloumi

I didn't use any flour or breading for the tofu. I just salted it and let it sit for 15 minutes for the water to leech out. It did help a bit, but frying is a little tricky, due to the excessive splatter.

I have not tried halloumi or even heard of it before. The recipe looks intriguing though.

Friday night I added a can of chick peas to a premade Chana Masala pre-made package, did a Bombay potato package in the microwave, made quick couscous instead of rice and scooped it all up with w/w pita.

Last night we had two cereal bowls of the 2 bean chili we made with blue corn tortilla chips, a bit of cheez on top - so good and with lots left over for the freezer (unless we eat some of it tonight).

I added a tofu scramble to our brunch yesterday so we were not very hungry for dinner - cut up 2 zucchini and 1/2 a cucumber and half a bell pepper into sticks, added some cherry tomatoes and olives and had hummus with sriracha on top to dip it all in, oh, and a few potato chips too and for dessert a date, a brazil nut and 4 almonds.

I am making a large pasta. By first boiling carrots, onion and mushrooms in water with salt.
Then adding pasta and a mix of green spices and pepper.
Then adding tempeh, which I marinaded in tomato paste, dijon, magi sauce, liquid smoke, garlic powder, BBQ spices, apple cider vinegar and sesame oil.
