Supper/Dinner Time! What's on the menu ?

Made rice and orzo with a packet of onion soup/dip mix. After cooking I added mushroom powder and couple cups of shredded zucchini, covered and let sit. I looked up recipes from Allrecipes, changed it up a lot. Super good. I added lemon pepper seasoning at serving
I need to find that French onion dip mix in a quantity. I like to use it in so many things

I had a big lunch at the Boston Veg Fest today, so dinner will be some hummus and pretzels, I think, or maybe just popcorn.

I don't remember the name of the dish I had, but it was almost soupy, finely chopped spinach with chickpeas over jasmine rice and a veggie samosa. It was delicious. The seasonings were fabulous. There were lots of options for food at the Veg Fest, but I was really in the mood for Indian food, so that's what I had.

Tonight, rainbow silverbeet, butter beans, tomatoes, avocado, noodles, soya sauce and maybe a little hot chilli, depending on flavour… a bourbon’n’cola… ok, I have added chilli and experimented with some pickles, which has given a subtle flavour…

I sous chef'ed and my honey made the spaghettini last night - so delicious - garlic, onion, lots of mushrooms, chili peppers, olives, cherry tomatoes - for dessert a couple of raspberry streudels from the store, they were just okay, not great.

Tonight will be small plates for American Football Sunday :). I'm going to have veggie samosa bites, vegan cheese and crackers (new vegan cheese recipe yet again, lol, and we'll see how it tastes), pineapple chunks and blueberries. I might have some hummus and carrots as well. We'll see how much room I have in my stomach, haha.
 
the most minestrone I could fit in a 6 quart Instant Pot. First cooked pinto & kidney beans, then added green beans, zucchini, carrots, celery, potatoes, tomatoes, onions and the tiny bits of the cauliflower I had separate. I didn't add pasta so maybe not minestrone?
 
Italian ww organic tagliatelle in lemon/evo sauce with a hint of garlic plus a huge sprinkle of Violife (prosciano) parmesan style cheeze.

A chicory salad with vinaigrette/yeast flakes.

Soya yogurt with a few drops of salted Cornish caramel plus sweetener.

I've always seen pasta in minestrone.

I really enjoy a thick minestrone soup for lunch during the chilly winter months. However, I usually omit pasta as it's my least favourite ingredient in soup. Moreover, it's usually overcooked which I dislike.

A hearty soup, leek & cauliflower with added thinly slice white seitan, oats a huge drizzle of evo and yeast flakes.
Applewood cheeze on toast (artisan ww multis seed bread) with mustard.

Pink plum crumble with a hint of pumpkin spice served warm with soya cream.

The bread I made is so good for sopping up the broth. I used a big can of whole stewed tomatoes. I thing I'll stick with those rather than diced. I just mushed them up with my hands

Raspberry streusel :lick:. I still have phyllo dough in the freezer....

Perhaps, the perception is that minestrone always has pasta, but not so… I never use oil, only water and generally, my stew/minestrone is mostly pretty sloppy, which is the way I like it

A leek, soya curl buckwheat risotto with a drizzle of evo, yeast flakes, smoked Cornish sea salt, smoked chipotle flakes plus
some Violife grated prosciano cheeze.

Warm plum crumble with a hint of pumpkin spice served with soya cream.
 
burrito bowl last night - rice, black beans, green onions, cherry tomatoes/olives, salsa, finely chopped kale - lots of spices and I reheated the black beans in a bit of pickled jalapeno juice so that taste and cumin made them very yummy

Haven’t found the Japanese BBQ sauce anywhere, but came across these Soya Crisps… guess they’re nothing like your Soya Curls, cause they’re a little bland and don’t really add any flavour to my veg mix… cheap enough, though
