Supper/Dinner Time! What's on the menu ?

we had our usual aglio y olio spaghettini with tons of garlic, green onions, mushrooms, cherry tomatoes, olives and I went shopping so had some treats like oatmeal-raisin cookies etc - omg so sweet and so fatty, I almost don't like them...

my honey made a 2 bean 1 Gusta ground package chili for Easter dinner as there are no Canadian faux turkey and still not buying American anything if I can help it - carrots, onions, garlic, bell pepper, can of tomatoes, kidney & black beans - also bought a pumpernickel loaf to eat it with and some tortilla chips

I'm trying not to buy American, either! I bought a crochet pattern from a Canadian YouTuber yesterday, which was nice.

I'm going to have tofu quiche with roasted rosemary potatoes.

I haven't made quiche in a while, but my favorite way is to bake tater tots (or hash brown patties) in a casserole and then pour the tofu mixture over it.

I made Jollof rice yesterday. We love it soooo much! I only change up the cumin for extra curry powder, other than that I follow this recipe

Oh, my, I will have to try the tater tots version. That sounds delicious!
 
trying to make chicken biryani today for the first time. good luck to me. It’s the first time in a while that I can eat normal food again—had a terrible stomach issue after eating some street food. Thanks to canadian pharmacy partner, I was finally able to recover after 3 rough days. Fingers crossed the biryani turns out decent—feels good to be back in the kitchen again and actually wanting to cook. Might even make a dessert if all goes well.
