I never did make this last night, so I'm going to give it a go for tonight's dinner.I am thinking I might want a pesto pizza tonight. I want to try a vegan pepperoni recipe that I think is from Nora Cooks. I will put onions and olives on it as well and maybe sprinkle some vegan Parm on top.
This came out pretty well. I used pie crust instead of pizza dough, so it was more like what some of you call a pasty. I have another one for tonight.I think I'm going to try making a calzone with kale, black olives and the vegan pepperoni I made yesterday.

I am loving them, too! I think they will become part of the regular rotation in my meal planning. They are so easy to make, and there are lots of possibilities for fillings.
