Supper/Dinner Time! What's on the menu ?

I'm going to have roasted veggies (potatoes, carrots and broccoli) with a zucchini cake and vegan tartar sauce, plus a side salad of spinach, lettuce, tomatoes, onions, celery and walnuts topped with Italian dressing.
Hmmm, yum, my kind of mix, but I’d probably add satay as the salad dressing… something like the Indonesian ‘Gado gado’

After an eventful day in town; medical plus destringing a pidge; I was too exhausted to cook anything special.

A baked sweet potato with Flora and Cornish smoked sea salt. A few slices of white seitan.

A cookie brownie from Land & Monkeys.
Hmm, I always loved regular baked spud, but never baked sweet potato. Bet it’s yum

I gather that you live in a small town? I'm sure that all of the major cities in Oz have bakeries with various pastries and cakes. Almond croissants are one of my favourite bakes. Nothing beats a jam doughnut or an almond croissant.

took a spicy channa masala ready to eat Indian meal and put it to heat on the stove with added frozen vegetables, a can of chick peas, more spices and served on gussied up rice done in the cooker (raisins, fennel seeds, garlic powder, cayenne, turmeric)

I feel very full up from my lunch. I might just have crackers with pate and some fruit. I fancy the Waitrose vegan cheese, but I can’t be bothered to walk there and back.☺️

we had a very simple meal last night as my noodley soup was huge at lunch time - hummus with green onions, black olives, hot sauce on top scooped up with potato chips, plain croutons and carrot sticks

I’m going to make an orzo dish. My husband is going to buy some asparagus from Tesco.
The other day I cooked orzo with carrots and celery in the broth I had from cooking seitan. It gets nice and thick the next day- I like adding some lemon. I usually use spinach or kale, but didn't think to get any. I love orzo, and always have it (from Trader Joes!)

I made mashed pinto beans and just had some with tortilla chips I got from Costco. They had them as samples with a hummus that I really like (and I don't really like hummus), but that container was just too big. The chips are really good-with light crispy bubbles
