Supper/Dinner Time! What's on the menu ?

I was out shopping late for groceries (well late because it was dark by the time I was done) and neither of us felt like cooking so I went back out and picked up some Indo-Chinese Hakka to go, noodles, rice, spring rolls and we ate almost all of it - it was very tasty and spicy and we were very very full.

I made a one pot (IP) Mexican style wholegrain rice & vegetable dish including red peppers, butternut squash, black beans, whole grain rice, soya curls plus spices and seasoning. Served with a sprinkle of yeast flakes, Violife Prosciano and a drizzle of evo.

Soya yogurt with a few drops of sea salted caramel, sweetener and Speculoos biscuits.

I finally found some IKEA non-meatballs so had those in a frying pan with whole mushrooms and brussel sprouts and sauted them in Korean BBQ sauce and the small amount of leftover veggie takeout rice under it - delicious.

Last night I had a vegan grilled cheese on sourdough and some air-fried potato wedges. I'm not sure what I am in the mood for tonight, lol. Maybe soup. I might make either roasted butternut squash soup or potato, kale and black bean soup.

I tried to replicate the garlic eggplant I get from take out Chinese. I used 4 large cloves but really didn't taste them, and in the end I realized it was missing sugar. I didnt' want to use sugar. I guess I'll just leave it to take out!

a most delicious meal last night - sauted onion, green onion, mushrooms, jalapeno, Apple Sage sausage cooked first then sliced and boiled sauerkraut perogies added - all done in various steps - more sauerkraut on the side and nooch sprinkled on top

I remember a commercial for Calgon laundry detergent. A customer is asking the owner how he gets clothes so clean, and he replies: "Ancient Chinese secret!" The camera cuts to an aside with his wife, who explains that the detergent is their "secret", and eventually comes to the counter grinning, saying, "We need more Calgon!"- and the customer says " 'Ancient Chinese secret", huh?..." :D Maybe the eggplant dish included something most of us wouldn't think of.

I'm surprised you couldn't taste the garlic. I absolutely love Chinese food- I always have- but I'm clueless about the ingredients unique to that cuisine beyond soy sauce, bamboo shoots, water chestnuts, and those tiny corn cobs. I once got a book on Chinese cooking by Stella Lau Fessler out of the library; I can't remember if it was only vegetarian recipes.

ETA: The Kabocha squash turned out great- nice and sweet, with no oil or seasoning necessary! I just rinsed/scrubbed it off well, took out the seeds, cut it into big pieces, and put it in the crockpot on "low". The skin is edible, so I left it on; it's a little bit crunchy and not tasty compared to the flesh, but it's good. I'm munching the seeds now and then- I didn't bother roasting them, but they probably would have tasted better. Then again, these seeds have a much thicker hull/coat than pumpkin seeds, and might be better raw.

I have to go and pick up my library books and then I have an evening class so I’m going to go out for a meal in between. I’m not sure if I fancy pizza or a curry…
