White Aubergines/Eggplant

I have bought over a kilo of white aubergines/eggplant at my local farm/produce shop. They have a much milder taste than the purple variety and are really delicious.

White aubergines are usually much more expensive than the purple variety but are used in the same manner. They have a much milder taste and are really delicious.

They are. My regular grocery store carries them, but they are usually twice the price, so I have never tried them.

I got some on sale a couple of times, really good. The skin isn't bitter like the purple ones.

Aubergine bake made with passata, spices and oregano. Topped with Daiya cheddar, linseed and oregano.

I used the white aubergines that I purchased locally and the dish had a very delicate taste without any bitterness.

Moreover the aubergines don't have any seeds are are easier to peel.

I have tried them only once, when they came in my CSA basket. They are indeed delicious.

I thought I found it in the Asian store today, and then it just was white squash. But at least they have green, yellow and white squash there! (And a lot of strange veggies I don't know what is...)
