White Aubergines/Eggplant

Do you cook with them as the purple ones? I've never seen white eggplants in the store.
 
I just saw some at my store...I may go back and get some.

Aubergine bake made with passata, spices and oregano. Topped with Daiya cheddar, linseed and oregano.

I used the white aubergines that I purchased locally and the dish had a very delicate taste without any bitterness.

Moreover the aubergines don't have any seeds are are easier to peel.
 
They are. My regular grocery store carries them, but they are usually twice the price, so I have never tried them.
I have tried them only once, when they came in my CSA basket. They are indeed delicious.
 
I thought I found it in the Asian store today, and then it just was white squash. But at least they have green, yellow and white squash there! (And a lot of strange veggies I don't know what is...)
