Vegan Hunan Style Orange Tofu

I have posted this recipe on other sites but would like my recipes to also be available on the sites I frequent now as well.


Ingredients:

1 block firm tofu, cubed
3/4 cups water
1/2 cup brown sugar
1/4 of a cup rice vinegar
2 tbs lemon juice
2 tablespoons soy sauce
2 tablespoons orange juice
1 tablespoon finely grated orange zest (orange peel... very important!)
1 teaspoon minced ginger root
1 teaspoon minced garlic
1/4 of a teaspoon crushed red pepper
3 - 6 scallions (only the green part) for garnish

1 tablespoon corn starch and 2 tablespoons water mixed well for thickening.



Instructions:

While your tofu is frying, in a mixing bowl combine all ingredients except for green onions and corn starch mixture. Once tofu has browned you can add your choice of fresh or frozen stir fry vegetables, cook until soft. Add sauce mixture bringing to a boil and finally while stirring add corn starch mixture to thicken into almost a glaze. Add green part of scallions and cook for an additional 2 minutes.

This sounds good. I will make it as soon as I get to a Chinese market to restock on soy sauce. (I only buy soy sauces from Chinese or Japanese stores since I discovered how much better they taste than what's produced for the American market.)
 
I'm not real sure what I was thinking when I originally posted this recipe years ago but now that I made it tonight for dinner I'm wondering why the heck I wrote down "1/8 cup lemon juice". Would be much easier to have said 2 Tablespoons. Too bad I can't edit it now.
