Vegan Tamale casserole

Saute ½ cup chopped onion, then add:
  • 1 tbsp flour
  • 14 - 16 oz diced tomatoes, undrained
  • 1 cup whole kernel corn, drained
  • 4 oz canned chopped green chiles
Mix together
1 cup cornmeal
1/4 cup flour
3/4 tsp baking soda
1/2 tsp baking powder
1 can creamed corn
1/2 cup bean liquid or water

Grease an 8x8 casserole and heat oven to 350 F. Pour about half the batter in pan, and top with filling. Add vegan cheese shreds if desired, then top with rest of batter
Bake 30-40 minutes

The bottom is soft, the top crust crusty. The creamed corn gives it a nice sweetness. I like to add hot sauce as preference at serving rather than make it spicy

Oh this sounds good! I'm in such a food rut lately. Part of it is the whole trying to lose weight thing. I'm pretty much eating the same thing everyday because it's working and it's easy. But when I'm down another pound or two I'm going to try this. Thanks for the recipe!

Ooops, past the point of editing

Anyway, it needs like 3 cups cooked beans, or less and add some soy chorizo (I used Trader Joes). Seasoned as you like
The next day it kinda melded together, but I like the consistency of adding creamed corn to batter.

lol...I think it's hysterical that I didn't notice beans were missing. I must have just assumed they were in there, maybe because of the bean water lol 😂
 
That sounds like a great freezer meal. I love the idea of using creamed corn in the batter to keep it moist. I've never tried making a tamale casserole before, but I'm adding this to the list.

Finding canned green chiles and creamed corn can be a pain where I am. I usually order a few tins from McGrocer when I'm stocking up on beans and cornmeal. Saves a trip.

I like to keep a can of creamed corn on hand, and it's just slightly blended corn kernels with some of their puree, but if you look up "creamed corn" recipes you get a casserole dish with corn and cream and butter! You can just blitz some corn. Use whatever chilis/peppers you like
