Vegan Tamale casserole

Saute ½ cup chopped onion, then add:
  • 1 tbsp flour
  • 14 - 16 oz diced tomatoes, undrained
  • 1 cup whole kernel corn, drained
  • 4 oz canned chopped green chiles
Mix together
1 cup cornmeal
1/4 cup flour
3/4 tsp baking soda
1/2 tsp baking powder
1 can creamed corn
1/2 cup bean liquid or water

Grease an 8x8 casserole and heat oven to 350 F. Pour about half the batter in pan, and top with filling. Add vegan cheese shreds if desired, then top with rest of batter
Bake 30-40 minutes

The bottom is soft, the top crust crusty. The creamed corn gives it a nice sweetness. I like to add hot sauce as preference at serving rather than make it spicy

Oh this sounds good! I'm in such a food rut lately. Part of it is the whole trying to lose weight thing. I'm pretty much eating the same thing everyday because it's working and it's easy. But when I'm down another pound or two I'm going to try this. Thanks for the recipe!

Ah geez :rofl: I did so much editing to my copymethat recipe I forgot a bunch! I'll correct.
Ooops, past the point of editing

Anyway, it needs like 3 cups cooked beans, or less and add some soy chorizo (I used Trader Joes). Seasoned as you like
The next day it kinda melded together, but I like the consistency of adding creamed corn to batter.

lol...I think it's hysterical that I didn't notice beans were missing. I must have just assumed they were in there, maybe because of the bean water lol 😂
