Hah, my mom is like you. I'm the opposite, the riper the better, though I even have a point of no return on eating them, and then they end up in the freezer or in a loaf or muffins.I will be eating fresh banana loaf in about 3 minutes...and counting.
I had some over ripe bananas to use up. I often freeze them like this. I am so picky with bananas. I like them almost green...almost! After that, they are smoothie or loaf material.
