What Did You Cook or Bake today?

I won't be making overnight bread again 🙄 . Not only wasn't I able to nap after working my 13th day in a row, but I dislike the texture. It's like the gluten was overdeveloped, and is bouncy, kinda like seitan without anything added to cut the gluten. Maybe I shouldn't have used bread flour? IDK, is not for me. I have and love my Kitchenaide mixer and have plenty of yeast!
Those date walnut balls however, are divine!
 
I mixed four batches of dough, thinking at least one would be really good, but they all failed. It's just too warm and they all over proofed. I made one into a cinnamon sugar focaccia and that ended up being good. The other three loaves are just too dense. I have to figure out if I can do something with them. They really won't be enjoyable if I just try to toast them. I could do croutons as I really love them but since my jaw issue, which is improved but not "better", I can't eat anything too chewy or crunchy. Maybe I can make breadcrumbs.

I wonder if I could do a bread pudding... 🤔 Some things just don't work out for me without eggs.

I was going to suggest breadcrumbs as well. I'm sorry the dough didn't work out. :(

I'm going to make flatbread today and maybe a loaf of white bread. I'm being lazy today, lol. I'm home for a couple of days, so I want to take advantage and do some food prep.

The only thing I can think of would be to soak pieces of the dense bread in a liquid of your choice so it's easier to chew. I don't think that sounds appetizing, but I hate to waste food. Then again, maybe it wouldn't be that bad... oatmeal is kind of mushy, but it's one of my all-time favorite foods.

Don't toast the bread, just cut or tear up and add to salad or soup-or even marinated beans.
I've made a bread pudding before, but I don't like them-same reason! I didn't save the recipes, but all the ones I see now call for coconut milk

What about stuffing casserole? Tear it up and add to carmelized onions, and other veg, heavy seasoning, and just enough broth to moisten
Or, make some broth and have a tofu sub and dip?
