I won't be making overnight bread again
. Not only wasn't I able to nap after working my 13th day in a row, but I dislike the texture. It's like the gluten was overdeveloped, and is bouncy, kinda like seitan without anything added to cut the gluten. Maybe I shouldn't have used bread flour? IDK, is not for me. I have and love my Kitchenaide mixer and have plenty of yeast!
